A carving Turkey is in the oven breast up If you want a turkey that will make you famous put it in a bag at 300 breast down. It will melt in your mouth. A turkey in a bag will cook faster than otherwise. You won't have to baist it. Fresh turkeys are the moistest. Most cook books will give you an estimate on time per pound.

I would definantly say to brine it(marinate in a mixture of salt and herbs and other stuff, you can buy it at stores right now) for about 2-3 days in the fridge and then roast it in the oven on thanksgiving.55 min. in the oven for every 4 lbs of turkey.

Salt and pepper the turkey the night before. Take cheesecloth and soak it in bourbon. Place it in the cavity of the bird. Take more cheesecloth soaked in bourbon and wrap it around the turkey. Bake according to instructions. Juicy, juicy, juicy!
