"Candied Yams" - 6 servings
4 yams or sweet potatoes; unpeeled
1 tsp. salt
1/2 cup butter or margarine
1/2 cup packed brown sugar
1 tbsp. grated orange peel
1/4 cup orange juice or water
1/8 tsp. ground cinnamon
Generous dash pepper
1/2 cup coarsely chopped walnuts (optional)
1) In 4-quart saucepan, place yams and salt; add water to cover. Over high heat, heat to boiling. Reduce heat to low; cover and simmer 30-40- minutes until yams are fork-tender. Drain; cool slightly. Peel and quarter yams.
2) In same saucepan, combine butter, brown sugar, orange peel, orange juice, cinnamon and pepper; heat to boiling. Add yams and nuts; heat until yams are glazed, spooning sauce over to coat.
SWEET POTATO CASSEROLE: Use ingredients as above, but omit walnuts. Prepare as above in step 1. Butter 2-quart casserole. In large bowl with mixer at low speed, beat potatoes and remaining ingredients until light and fluffy. Spread potato mixture into prepared casserole; top with 2 cups miniature marshmallows. Bake at 375* - 15 minutes or until topping is golden.
"Sweet Potato Dressing" - 8 servings
1/3 butter or margarine
1/2 cup finely chopped carrot
1/2 cup finely chopped onion
1/3 cup chopped celery with leaves
2 cups hot mashed sweet potatoes
2 eggs; beaten
2 cups coarse soft bread crumbs
1 tsp. grated orange peel
2 oranges; peeled and chopped
1/2 tsp. salt
1/4 tsp. ground nutmeg
1) Butter 1 1/2-quart casserole. In 2-quart saucepan over medium-high heat, in hot butter, cook carrot, onion and celery until tender.
2) In large bowl with mixer at high speed, beat potatoes with eggs until fluffy. With spoon, stir in carrot mixture and remaining ingredients. Spoon dressing into prepared casserole.
3) Bake at 350* - 30 minutes or until hot. Serve with poultry. Yields 6 cups.
"Praline Sweet Potatoes" - 2 servings
1 cup mashed sweet potatoes
2 tbsp. milk
1 egg yolk
1/4 tsp. salt
Dash pepper
1/4 cup packed brown sugar
2 tbsp. butter; melted
2 tbsp. corn syrup
2 tbsp. chopped pecans
In a small mixing bowl, combine the sweet potatoes, milk, egg yolk, salt and pepper. Transfer to a greased shallow 2-cup baking dish.
In a small microwave-safe bowl, combine the brown sugar, butter and corn syrup until blended; cover and microwave on high for 1 minute or until sugar is dissolved. Spoon over sweet potatoes; sprinkle with pecans. Bake, uncovered, at 350* for 20-22 minutes or until a knife comes out clean.

INGREDIENTS
5 large sweet potatoes, peeled and quartered
3/4 cup packed brown sugar
2/3 cup whole milk
2 tablespoons butter, melted
1/4 cup all-purpose flour
1 1/3 cups pecans
1 cup flaked coconut
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.
Boil the sweet potatoes in a large saucepan approximately 10 minutes, or until tender.
In a large bowl, mix together the sweet potatoes, brown sugar, milk, butter and flour. Transfer the mixture to the baking dish. Sprinkle with pecans and coconut.
Bake 30 minutes in the preheated oven.

Recipe: 1.) 1 sweet potato (not yams) for each serving
2.)Wash each potato and then place on cookie sheet or baking pan (not glass). 3.) Bake at 400 for about one hour. Check doneness by inserting fork. If fork goes all the way through, it's done. If not done, keep checking every 15 minutes.
4.) Open skin on all potatoes and either slice, or mash like 'mashed potatoes' OR
5.) Mash potatoes (for every 6 potatoes) add 1/4 c. butter and 3/4 c. brown sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon salt.
6.) You can also use them mashed and add pecans, melted marshmallows, or cream and honey. Yummmm! Good Eatin'!

Take 2 lbs sweet potatoes, peel, boil til fork tender then drain. Place in mixing bowl & add 1/2 cup brown sugar, 1/2 cup white sugar, 1 egg, 1tsp cinnamon, 1 tsp nutmeg & 1/2 stick butter.Mix with mixer til creamy. Pour into casserole dish & top with mixture of 1 stick butter, 1 cup frosted flakes, 1/2 cup crushed pecans & 1/2 cup brown sugar. Bake @ 350 for about 35 - 45 minutes......goes great with ham!!

SAUSAGE & POTATO
5 peppers
3 onions
5 red potatoes
3 lbs. Italian sweet sausage
1 (27 oz.) can Hunts Homestyle Traditional Spaghetti sauce
1 c. red wine (opt.)
3 to 5 cloves finely chopped garlic (opt.)
Layer bottom of large roasting pan with sausages. Slice up peppers and onions. Place on top of sausages. Wash and quarter red potatoes with skins on. Place on top of peppers and onions. Cover everything with the spaghetti sauce (add the wine and chopped onion, if using). Cover with aluminum foil. Bake at 400 degrees for 2 hours. Uncover for the last 15 minutes. Remove from oven and mix up. Let stand for 10 minutes.
