After the head is off, dunk it in HOT water for a few minutes, and pluck the feathers. This may take a few dunkings. There may be some pin feathers left....you can deal with those later. Cut off the feet. Loosen the wind pipe away from the neck as best you can. Spread it's legs and cut the skin from the end of the breast bone down to the tail. Be sure to cut only the skin. Don't cut into the innards. Then cut across this leg to leg....kind of a 't' pattern. Reach in under the breast bone to loosen the innards and pull them out as best you can. The wind pipe should come with them, but if it dosen't you can pull it out from the neck. When you have the guts out, carefully cut around them and the tail..cut the tail right off ...be sure not to cut into the guts. Reach back in and get out what didn't come out the first time...make sure you get the lungs and liver. You may have to rinse it a few times with cold water to get it all out. Then rinse it again real well and pick out the pin feathers. Wa -la! one cleaned pheasant.

I find the easiest way to remove the feathers is to skin the bird.
#just remove a line of feathers down the centre of the chest and with a SHARP knife cut only through the skin and ease off with your finger and peels the skin and feathers together.
the skin on a pheasant is not worth cooking anyway.
remove the guts in the sink under running water
again with a SHARP knife cut a hole around the ar$e end making a hole just big enough to insert 2 fingers insert and hook out the guts...

Well I'd suggest a nice black suit, white shirt, burgundy tie. He will look stunning if you can get him to sit still for long enough.

try some recipe sites,i think you have to hang them up for a while before defeathering it etc or am i thinking of something else,sorry not very helpful.
