If he built them an Ark they would only be able to get in two by two, which would take a heck of a long time. And it would leave a multitude of Egyptians undrown.

No one knows what God thinks, but my guess is that he wanted to prove to his people that he has power. You could buy or build an ark, but only God can part the sea. Or maybe, because if he did go in a boat then then Pharoah and them might just get a boat and follow them. Then what would they do?

They didn't have time, Pharaoh was right on his butt. Remember also some of the plan was that Pharaoh's army would all be lost in the sea, and I don't think they would have taken after them on foot if they were in a boat.
