Can you freeze shredded carrots? I'd like to keep them on hand for recipes, but I only use a little at a time, I never get thru the whole bag. (some stores carry carrots by the peice that I can shred in small batches, but sometimes it's more convenient to get them pre-shredded)

I've had good success with freezing shredded carrots but they need a bit of blanching and draining first. Then they can be used in cooked recipes.

Sure, it's perfectly fine! I've done it. I even keep a bag of baby carrots in the freezer so I have them at a moment's notice. They don't lose texture at all.
