We used to have a Southern living cookbook that had a great recipe for Banana Bread. Does anyone know the recipe?

Cream Cheese-Banana-Nut Bread

For a request from Southern Living, January edition. Submitted by Willie Monroe, Homewood, Alabama. Prep time does not include making toppings. The nutrition facts includes all of the topping ingredients.

8-10 servings 2 Loaves 1 day 15 min prep

3/4 cup butter, softened
1 (8 ounce) package cream cheese
2 cups sugar
2 large eggs
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups bananas, mashed (about 1/14 lbs. or 4 medium)
1 cup pecans, chopped, toasted
1/2 teaspoon vanilla extract
Orange Pecan Topping
1 cup pecans, coarsely chopped, toasted
1 cup powdered sugar
3 tablespoons orange juice, fresh
1 teaspoon orange rind, grated
Cinnamon-Crisp Topping
1/2 cup brown sugar, firmly packed
1/2 cup pecans, coarsely chopped, toasted
1 tablespoon flour
1 tablespoon butter, melted
1/8 teaspoon ground cinnamon

Beat butter and cream cheese at medium speed with electric mixer, until creamy.
Gradually add sugar, beating until light and fluffy.
Add eggs, 1 at a time, beating just until blended after each addition.
Combine flour and next 3 ingredients; gradually add to butter mixture, beating at low speed just until blended.
Stir in bananas, pecans, and vanilla.
Spoon batter into 2 greased and floured 8 x 4 inch loafpans.
Bake at 350º for 1 hour, or until tests clean. (Shield with foil the last 15 minutes to prevent browning, if necessary.
Cool bread in pans on wire racks 10 minutes.
Remove from pans, and cool 30 minutes on wire racks before slicing.
Orange Pecan Topping:.
Sprinkle pecans over batter before baking.
Cool bread 10 minutes, remove from pans.
Stir together sugar, orange juice and orange rind.
Drizzle evenly over warm bread.
Cinnamon-Crisp Topping.
Stir together brown sugar, toasted pecans, flour, melted butter and cinnamon.
Sprinle mixture evenly over batter.
Bake and cool bread.

Southern Living Banana Bread

Banana-Nut Bread

1 and 1/2 C whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
4 med. sized ripe bananas, mashed
1/2 C sugar
1 large egg, slightly beated
2 Tbsp. oil
2 tsp vanilla extract
1/2 C chopped walnuts, roasted
Vegetable cooking spray

Stir together first 4 ingredients in a large bowl; make a well in center of mixture.
Stir together bananas and next 4 ingredients; add to flour mix, stirring until dry ingredients are moistened. Fold in walnuts.
Pour batter into 9 by 5 loaf pan which has been coated with vegetable spray.
Bake at 350 for 55-60 minutes or until a wooden toothpick inserted in the center comes out clean. Cool in pan on wire rack for 10 minutes; remove from pan and cool completely on rack.

Banana Bread

INGREDIENTS

* 1/2 cup shortening
* 1 cup white sugar
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 3 ripe bananas

DIRECTIONS

1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8x4 inch loaf pan.
2. In a large bowl, cream the shortening and sugar. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Pour batter into prepared pan.
3. Bake in preheated oven for 60 minutes, or until a knife inserted into center of loaf comes out clean.

Warm bread is yummy, but to get perfect slices, let bread cool 30 minutes, and cut with a serrated or electric knife.

1 ½ cups mashed bananas (1 ¼ pounds unpeeled bananas, about 4 medium)
1 cup chopped pecans, toasted
½ teaspoon vanilla extract
BEAT butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition.

COMBINE flour and next 3 ingredients; gradually add to butter mixture, beating at low speed just until blended. Stir in bananas, pecans, and vanilla. Spoon batter into 2 greased and floured 8- x 4-inch loafpans.

BAKE at 350° for 1 hour or until a long wooden pick inserted in center comes out clean and sides pull away from pan, shielding with aluminum foil last 15 minutes to prevent browning, if necessary. Cool bread in pans on wire racks 10 minutes. Remove from pans, and cool 30 minutes on wire racks

I don't know about the Southern Living recipe, but I've been living by the Cook's Illustrated recipe for a year now and love it. The secret ingredient is plain yogurt. Let me know if you want it. dm063 at hotmail dot com.
