What I've done is done the prep work the night before - cooked, sliced and deviled the yolks the night before.
Store the whites in a ziploc or on a serving plate and wrap with plastic wrap so it doesn't dry out.
In another ziploc, mash the yolks and add your other ingredients and make it all in the ziploc. Cut the corner of the ziploc when you're ready to fill the eggwhites. It's less fuss, a lot cleaner method than mixing in a bowl and transferring.
When you fill the eggwhites is up to you, that night before or at the church. You'll have everything ready to do it either way.
I usually like filling them the day of the party becuase it just looks better. However, if you're short on time, it's not really a big deal if you fill and wrap securely the night before.

Making your deviled eggs tonight for a dinner tomorrow will be perfectly fine...they always taste better if u let them sit overnight. Just be sure to cover them with foil or plastic wrap and store them in the fridge overnight!

Yep I always make them the night before easter and wrap with saran wrap they taste better and all the flavor seems to really seep into them.
