dig a pit, put coals on bottom after they have become hot put a stick through the pig and every 1/2 hr turn keep pig off the coals this takes anywhere from 12 to 24 hr

Pork, or pig, needs to be cooked long enough that it is very
'done', and is tender all the way through.

You can do this in a number of ways.

First, rub salt and pepper all over the roast. Use about three teaspoons of salt per kilo of pork.

If you like, you can brown the outside of the pork roast in hot fat first. Then put it in a large pot with a lid, add some water or stock to the bottom of the pot, and put in the oven at about 350F
(175C).

Check to see when it is done by testing with a fork. Dont let the water or liquid run dry.

In general, it will take about 30-45 minutes per kilo of weight.
