for raw potatoes use about 6
canned use 2 40 oz cans

peel and cube your sweet potatoes then boil if raw, if canned you can skip that step.

blend with 1tsp nutmeg, 1tsp vanilla, 1tsp cinnomon, 2 tblsp orange peel zest and 2tblsp orange juice and 4tblsp butter and 3 tblsp brown sugar.

place in pan put marshmellows on top and bake on 350 till marsh mellows are golden.

if useing canned swpots besure to heat them before blending so the butter will melt.

hi there; here is one that i have: Deep South Sweet Potato Pie>>>>1 1/2 cups sweet potatoes, boiled and mashed>>>4 eggs >>1/3 cup sugar>>2 tablespoon honey>>3/4 teaspoon cinnamon>>1/4 teaspoon nutmeg>>1/8 teaspoon ground ginger>>1 cup light cream>>1/8 teaspoon salt>>1 teaspoon vanilla and one unbaked pie shell>>>>>>>>>Mashed the sweet potatoes with a mixer until smooth; Beat 4 eggs very lightly and add to the Sweet potatoes..Stir in the sugar and beat all together. Add the honey and all the spices plus add the vanilla and the light cream..mix this altogether to blend..Pour into the pie shell and bake in a preheated 450* oven for 10 minutes..Reduce the heat and finish baking at a 350* oven for 30 minutes longer or until a knife inserted near the center comes out clean..You can make a meringue , spread onto the pie and bake until the meringue is brown..Good Luck and Happy Holidays

SWEET POTATO PIE

1 (29 oz.) can sweet potatoes, drained & mashed
2 c. sugar
2 tbsp. soft butter
1 tbsp. flour
1 tsp. cinnamon
1 tsp. nutmeg
2 tsp. vanilla
1/2 tsp. baking powder
1/4 tsp. salt
2 eggs
1/2 c. half & half
Unbaked pie shell

Combine sweet potatoes with all ingredients except eggs and half & half. Mix well. Beat in eggs and add half & half. Pour into pie shell. Bake for 15 minutes in a 425 degree oven. Turn oven to 350 degrees and bake 45 minutes longer.
Note: To prevent pie crust edges from burning, cover with foil strips.

Don't see why you can't top this with mini-marshmellows and broil for a minute or two before serving...yummm!

You'll find the marshmallow version at the bottom of this recipe...

"Candied Yams" - 6 servings

4 yams or sweet potatoes; unpeeled
1 tsp. salt
1/2 cup butter or margarine
1/2 cup packed brown sugar
1 tbsp. grated orange peel
1/4 cup orange juice or water
1/8 tsp. ground cinnamon
Generous dash pepper
1/2 cup coarsely chopped walnuts (optional)

1) In 4-quart saucepan, place yams and salt; add water to cover. Over high heat, heat to boiling. Reduce heat to low; cover and simmer 30-40 minutes until yams are fork-tender. Drain; cool slightly. Peel and quarter yams.
2) In same saucepan, combine butter, brown sugar, orange peel, orange juice, cinnamon and pepper; heat to boiling. Add yams and nuts; heat until yams are glazed, spooning sauce over to coat.
SWEET POTATO CASSEROLE: Use ingredients as above, but omit walnuts. Prepare as above in step 1. Butter 2-quart casserole. In large bowl with mixer at low speed, beat potatoes and remaining ingredients until light and fluffy. Spread potato mixture into prepared casserole; top with 2 cups miniature marshmallows. Bake at 375* - 15 minutes or until topping is golden.
