Italian Sausage and Peppers
2 pounds sweet Italian sausage links
• 1 Tablespoon chopped garlic
• 6 bell peppers
• 1 medium yellow onion
• 1-28 oz. can crushed tomatoes
• Olive oil
• Salt and pepper
• 3 or 4 fresh basil leaves
• Cooked pasta or Italian rolls, split

Turn your empty crock pot on HIGH and pour 1 Tbsp of olive oil in the bottom. Stir the chopped garlic into the oil and cover the pot. Let the garlic heat up while you prepare the other ingredients. Slice the onion and add to the oil. Cut each sausage link in two; add to the crock pot. Clean and slice the peppers into strips; add to sausage. Stir all ingredients well before adding the can of tomatoes

spagetti bolgonese. for 4 people you will need 500g mince, brown it then add an onion, then add 2 tins tomatos(chopped) and a half pint of any red wine, add 2 teaspoons of garlic granules as it will save time, add teaspoon mixed dried herbs, and 1 red chillie(chopped)then mix together and cook for about 40 mins on a low heat, or until mixture thickens. It sounds hard to make but is really easy and very delicious, i always good comments when i make it, also you could serve with garlic bread, your guests will be impressed as it one of my favourite recipes and so much tastier than a shop bought sauce, enjoy!!

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

"Cordon Bleu" Manicotti
1 pkg (12) string cheese snacks
12 slices each deli sliced ham and chicken breast
12 manicotti shells
1 jar pasta sauce
3/4 cup water
shredded parmesan cheese

Roll ham and chicken slices around each string cheese snack and slide into mannicotti shells. Mix water with pasta sauce. Pour a little sauce into bottom of baking dish. Place Manicotti in baking dish and pour remaining sauce over shells. Bake covered with aluminum foil (or if baking with covered dish, cover with lid) bake at 350 for 50 minutes or until pasta is tender. Top with parmesan and serve.


RIGATONI AND HAM BAKE
3 c. rigatoni
2 c. diced cooked ham
4 oz. (1 c.) shredded Cheddar cheese
2 tbsp. butter
1/4 c. flour
1/2 tsp. salt
1/4 tsp. dry mustard
2 1/2 c. milk
2 oz. (1 1/2 c.) shredded Cheddar cheese
1/2 c. crushed potato chips
Paprika, if desired

Heat oven to 350 degrees. Boil water (2 quart) in a large deep pot with 2 teaspoons salt and 1 tablespoon oil (to prevent boiling over). Add rigatoni noodles, stir to separate. Cook uncovered until water comes to a full rolling boil for 10-11 minutes, stir occasionally. Drain and rinse under hot water. In a large bowl, combine cooked rigatoni, ham and 1 cup cheese. In a medium saucepan, melt butter; blend in flour, 1/2 teaspoon salt and mustard. Add milk all at once. Cook until thickened, stirring constantly, about 1 minute. Combine sauce with rigatoni mixture. Turn into 2 quart casserole. Toss 1/2 cup Cheddar cheese with potato chips; sprinkle over top. Sprinkle with paprika, if desired. Bake at 350 degrees for 25-30 minutes.


CHICKEN PARMESAN
4-6 chicken breasts
3 eggs plus 1 tablespoon water, beaten
1 1/2 cups breadcrumbs plus 1/3 cup grated parmesan cheese
1 jar favorite spaghetti or maranara sauce
Sliced Mozarella cheese

Place each breast between two pieces of saran wrap and pound thin using a meat hammer, rolling pin or a heavy can. Heat two tablespoons of oil in a skillet. Dip breast in the mixture of breadcrumbs and parmesan, into the egg wash and into the breadcrumbs again. Place in skillet and brown on each side, 2 to three minutes. Place in baking dish and cover with maranara sauce. Bake at 350 degrees for 30-45 minutes until chicken is cooked through. Place mozarella slices over breasts. Place under broiler 5-7 minutes until cheese is melted and bubbly and lightly browned.
