Macaroni and Cheese
8 oz. uncooked Elbow Macaroni
• 2 Tbsp. Butter
• 2 Tbsp. all-purpose Flour
• 1/2 tsp. Salt
• 1/4 tsp. Pepper
• 1 cup Milk
• 8 oz. shredded Cheddar Cheese

Heat oven to 375. Cook macaroni as directed on package. Drain. Heat butter in large saucepan over medium heat. Stir in flour, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in cheese until melted. Add macaroni and stir until coated

Beef in Mushroom Gravy recipe
2 to 2 1/2 pounds boneless round steak
1 to 2 envelopes dry onion soup mix
1 can cream of mushroom soup, undiluted
1/2 cup water
Mashed potatoes (optional)

Cut steak into six serving-size pieces; place in a crock pot.

Combine soup mix, soup and water; pour over beef. Cover and cook on LOW for 7 to 8 hours or until meat is tender.

Serve with mashed potatoes, if desired.

Yields 6 servings.


Bavarian Pot Roast recipe
1 (3 pound) beef or pork roast
1 (12 ounce) can beer
1 (8 ounce) can tomato sauce
1 cup water, tomato juice or wine
1 cup onion, chopped
1 clove garlic, chopped
2 tablespoons brown sugar
1 tablespoon vinegar
1 teaspoon cinnamon
1 bay leaf
2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon ginger
Cornstarch to thicken gravy

Combine all ingredients (except meat) in a crock pot. Mix well, add meat, then cook on LOW for 7 to 8 hours.

Discard bay leaf.

You can double all the ingredients except the meat if you would like more gravy.

Forgotten Chicken recipe
1 1/2 cups rice, uncooked
1/2 cup milk
1 can cream of mushroom soup
1 can cream of celery soup
1 envelope dry onion soup mix
Chicken breasts

Mix rice, soups and milk. Pour into a greased baking dish. Coat chicken on both sides with dry soup mix. Lay on top of rice mixture. Cover tightly and bake for 1 1/2 hours at 350 degrees F.

CHICKEN PARMESAN
4-6 chicken breasts
3 eggs plus 1 tablespoon water, beaten
1 1/2 cups breadcrumbs plus 1/3 cup grated parmesan cheese
1 jar favorite spaghetti or maranara sauce
Sliced Mozarella cheese

Place each breast between two pieces of saran wrap and pound thin using a meat hammer, rolling pin or a heavy can. Heat two tablespoons of oil in a skillet. Dip breast in the mixture of breadcrumbs and parmesan, into the egg wash and into the breadcrumbs again. Place in skillet and brown on each side, 2 to three minutes. Place in baking dish and cover with maranara sauce. Bake at 350 degrees for 30-45 minutes until chicken is cooked through. Place mozarella slices over breasts. Place under broiler 5-7 minutes until cheese is melted and bubbly and lightly browned.


Baked Mac-sagna
1 lb. Macaroni cooked and drained
2lbs. Hamburger, browned and drained
1 large container large curd cottage cheese
1 large can gr. Pepper and mushroom spaghetti sauce
1 cup each cheddar and mozzarella cheeses

In large bowl, mix macaroni, hamburger, cottage cheese, sauce, and 3/ 4’s of each of the cheeses. Pour into baking dish and top with the remaining cheese. Bake until cheese is golden and bubbly.


SUPER QUICK AND DELICIOUS CHICKEN AND DUMPLINGS
2 lbs. chicken (skinless)
1 packet chicken Lipton "Noodles and Sauce"
2 pkgs. refrigerator biscuit dough
1 c. milk

Boil chicken until well done. Remove from liquid and skim off any fat. When cool remove meat from bones. Meanwhile, add "Noodles and Sauce" packet and milk to boiling broth. Add chicken. Pull apart biscuit dough and add to boiling mixture. When dough floats, reduce heat and simmer about 30 minutes.

Normally I am a huge health-food advocate, and this is about as far from healthy as you can get, but it is one of my family's favorites and SO EASY AND QUICK!
Tater tot casserole:
Preheat oven to 350
Get a casserole dish,spray with non-stick spray,
cover the bottom with frozen tater tots
Cook one pound of hamburger and put it on top of the tater tots
cover everything with one can of cream of mushroom soup
Bake for about 35-40 minutes.

fry some chicken(cubed) for about 5 mins then add red onion and any variety of peppers, sprinkle over a packet of fajita mix, and add a teaspoon of oil, mix together and cook for a further 5-10 mins, then put the tortillas in the microwave for about a minute (if it is for 4 of you) then put tortillas onto plate then spoon the fajita mixture over them, then add either salsa sauce or sour cream and chive, delicious!! you could have them with wedges or salad

1-1/2 pkg. (12 squares) BAKER'S Semi-Sweet Baking Chocolate, chopped
1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1 cup chopped PLANTERS Walnuts
1 tsp. vanilla

Sweet Peanut Brittle:
1 cup sugar
1/2 cup light corn syrup
1 Tbsp. butter
2 cups PLANTERS COCKTAIL Peanuts
1 tsp. baking soda
1 tsp. vanilla
4 squares BAKER'S Semi-Sweet Baking Chocolate
1/4 cup creamy peanut butter

Christmas Fruit Bars:

1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cup rolled oats
1 cup brown sugar
3/4 cup margarine
3/4 cup fruit preserves


Stir dry ingredients together. Stir in oats 7 sugar, cut in butter until crumbly. Pat 1/2 crumbs in 11 x 7 pan. Spread with preserves, top with crumbs. Bake 375 farenheit for 35 minutes. Makes 2 1/2 dozen.

Dr. Pepper Float:
1 can coke or Dr Pepper
3 scoops of ice cream - chocalote or vanilla
4 cherries
2 red and green gum drops
red and green M&M's
whipped cream topping

Put ice cream in cup. pour soda on it. then add the whipped cream, cherries and candy.

Fudge:

6 cups sugar
1 1/2 cups butter
1 large can evaporated milk
2 packages chocolate chips
1 jar marshmallow cream
1 cup nuts

Cook in heavy pan until boiling, boil 10 minutes, stirring all the time. Take off burner and add chips, marshmallow cream and nuts, make sure you mix well, pour into 9 x 13 buttered pan. It will make 6 pounds.

Pumpkin Pie:
2 cups plain flour
1 teaspoon salt
125g butter or margarine
1/3 cup cold water


1. Put the dry ingredients into bowl. 2. Mix in the butter or margarine with fingers until the mixture resembles large breadcrumbs. 3. Add the water. 4. Make into ball. 5. Chill for 10 minutes. 6. Roll out 1/2cm thick. 7. Line pie dish with pastry.

Filling

1 1/2 cups cooked pumpkin 1/2 teaspoon nutmeg 1/2 teaspoon ground cloves 1 teaspoon cinnamon 1 teaspoon ginger pinch salt 225g brown sugar 1 1/2 cups milk 2 eggs, beaten 1/2 cup cream

1. Peel pumpkin. Remove seeds, stew till soft in a little water. 2. Press through sieve and add spices. 3. Put into bowl. 4. Add eggs, sugar, then milk and cream. 5. Beat hard. 6. Pour into uncooked pastry shell. 7. Bake in moderate oven (190 degress celcius) until it is set when you poke it with a knife.

Warm Chopped Chicken Picatta Spinach Salad

1 pound chicken breast cutlets, 6 pieces
Salt and pepper
3 tablespoons extra-virgin olive oil, 3 turns of the pan
1 tablespoon butter
2 shallots, chopped
3 cloves garlic, chopped
3 tablespoons capers, chopped
1/2 cup dry white wine
1 lemon, juiced
2 pounds triple washed spinach, stems discarded, leaves coarsely chopped


Season the chicken with salt and pepper on both sides. Heat a large nonstick skillet with 2 tablespoon extra-virgin olive oil, 2 turns of the pan, over medium-high heat. When oil ripples, add chicken and cook 3 minutes on each side then remove and let meat rest and cool.
To the same skillet, add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the butter. Melt butter into extra-virgin olive oil and add the shallots, garlic and capers. Saute 5 minutes then add white wine and reduce 30 seconds. Next, add the juice of 1 lemon and immediately add the spinach - mound up the pan. You will not be able to fit it all in there. Keep turning the spinach and wilting it down until you get it all in there then turn the heat off. Keep some leaves still a bit crisp to vary textures in your salad. Season the spinach with salt and pepper. Chop chicken into little bits and add to the warm salad. Toss to distribute and serve.


Mediterranean Barley Salad

Salad:
2 cups vegetable broth, low-sodium canned, or homemade
1 cup barley
1 teaspoon extra-virgin olive oil
1 teaspoon kosher salt
1/2 cup chopped Kalamata olives
2 medium tomatoes, diced
1/2 English cucumber, diced
2/3 cup chopped flat-leaf parsley
Dressing:
1/2 cup fresh lemon juice
1/4 teaspoon kosher salt
Freshly ground black pepper
3 tablespoons extra-virgin olive oil


Bring broth to a boil in a medium saucepan. Add the barley, oil, and salt. Bring back to a boil, adjust heat to maintain a gentle simmer, cover and cook until tender, about 30 minutes. Remove from the heat and let stand, covered, for 10 minutes more. Drain excess liquid, if needed. Cool.
Meanwhile, whisk the lemon juice, salt, and pepper in a large serving bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth dressing. Add the barley and the remaining salad ingredients and toss to coat with the dressing. Serve.


Escarole and Bean Soup

2 tablespoons olive oil
2 garlic cloves, chopped
1 pound escarole, chopped
Salt
4 cups low-salt chicken broth
1 (15-ounce) can cannellini beans, drained and rinsed
1 (1-ounce) piece Parmesan
Freshly ground black pepper
6 teaspoons extra-virgin olive oil

Heat 2 tablespoons of olive oil in a heavy large pot over medium heat. Add the garlic and saute until fragrant, about 15 seconds. Add the escarole and saute until wilted, about 2 minutes. Add a pinch of salt. Add the chicken broth, beans, and Parmesan cheese. Cover and simmer until the beans are heated through, about 5 minutes. Season with salt and pepper, to taste.
Ladle the soup into 6 bowls. Drizzle 1 teaspoon extra-virgin olive oil over each.

Easiest thing to cook these days ( and they can be good) frozen entrees or prepared soup. Fast too.
