how much butter do i use for 2 servings of microwavable rice?

Butter isn't going to make a difference is cooking the rice. It just adds to the taste, so add what you like. If it is not enough you can always add a bit to it when it is cooked.

I use way too much but it tastes great. I use at least 3 tablespoons of butter per serving

Butter is optional. But if you like the taste then use 1-2 tsp.

Depends on how buttery you like your rice. I'd go with 1 Tbsp to start, and you can always add more to your liking when it's done.
