I've got chicken breast, spinnach and pasta, what sauce could I make to go with it and what else could you suggest that I put in for additional flavour?? I was thinking of adding Cajun seasoning to the chicken???

2 tablespoons olive oil
1/2 large red onion, thinly sliced
1 1/2 tablespoons chopped garlic
1 tablespoon grated lemon peel
1 1/2 teaspoons minced fresh rosemary
2 large skinless boneless chicken breast halves, cut crosswise into 1/2-inch-thick slices
2 10-ounce packages ready-to-use spinach leaves
12 ounces penne pasta, freshly cooked, 1/2 cup cooking liquid reserved
1 2/3 cups grated Parmesan cheese (about 5 ounces)



Heat oil in heavy large pot over medium-high heat. Add onion, garlic, lemon peel and rosemary. Sauté until onion softens, about 7 minutes. Sprinkle chicken with salt and pepper. Add chicken to pot and sauté until just cooked through, about 4 minutes. Add half of spinach and toss until beginning to wilt, about 2 minutes. Add remaining spinach and toss until all spinach is wilted but still bright green, about 3 minutes longer. Mix in pasta, then 2/3 cup cheese. Moisten with reserved pasta cooking liquid by tablespoonfuls if mixture is dry. Season with salt and pepper. Serve, passing remaining 1 cup cheese separately.

Makes 4 to 6 servings.

2 boneless skinless chicken breast halves, cut into thin strips
2 teaspoons cajun seasoning
2 tablespoons butter or margarine
8 slices green peppers
8 slices sweet red peppers
1/2-1 lb mushrooms
1 green onion, sliced
1-2 cup heavy cream
1/4 teaspoon dried basil
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
4 ounces linguine, cooked and drained
grated parmesan cheese (optional)

Place chicken and Cajun seasoning in a bowl or resealable plastic bag, toss or shake to coat.
In a large skillet over medium heat sauté chicken in butter until almost tender, about 5-7 minutes.
Add peppers, mushrooms and onion; cook and stir for 2-3 minutes.
Reduce heat.
Add cream and seasonings; heat through.
Add linguine and toss; heat through.
Sprinkle with Parmesan cheese if desired.

Good recipe! I always mix things together to make a meal. Do not add that Cajun chicken.
-add everything you wanted to add to the pasta
-put the items on the side and let people add it
-put sauce on the side
-be creative and don't add too many things to the pasta
-have fun! I'm Italian!

chicken is quite bland, if you have some mature cheese make a sauce with half a teaspoon of mustard. pour over tha pasta and cooked chicken, mix in the cooked spinach, top with grated cheese. either cook in the oven or brown under the grill.

love Cajun so use that alternative get a chicken or mushroom soup even cup a soup and the spinach and serve over the pasta

Easy Chicken Pasta Casserole:

8 oz. Ziti, Mostaccioli or other medium pasta shape, uncooked
2 tbsp. margarine, divided
8 oz. mushrooms, sliced
3 tbsp. all-purpose flour
1 tbsp. Dijon mustard
1 3/4 cups skim milk
1/4 tsp. salt
2 5-oz. cans chunk white chicken, drained and flaked
1 2-oz. jar pimentos, drained and sliced
1/3 cup grated Parmesan cheese
Salt and freshly ground pepper to taste


Preheat oven to 350-o F. Prepare pasta according to package directions. While pasta is cooking, melt 1 tablespoon margarine in skillet over medium-high heat. Add mushrooms and saute 2 to 3 minutes. Drain off any liquid and set mushrooms aside. Place the remaining margarine in the skillet and melt over medium-low heat. With a wire whisk, stir in flour. Gradually add the Dijon mustard, milk and salt, stirring constantly until mixture boils and thickens. Once thickened, stir in mushrooms and remove from heat.

When pasta is done, drain well. Return pasta to the pot and add chicken, mushroom mixture, pimentos, cheese and pepper. Combine all ingredients together and transfer to a 2-quart casserole dish. Bake for 15 minutes or until heated through. Serve immediately.

12 ounces linguine pasta
4 boneless, skinless chicken breast halves, cut into thin strips
1 tablespoon Cajun seasoning
1/4 cup butter
1 cup sliced fresh mushrooms
1/2 cup chopped red or green bell pepper
2 thinly sliced green onions
1 cup chicken broth
2 cups heavy whipping cream
1/4 cup drained and chopped sun dried tomatoes (packed in olive oil)
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
Salt and freshly ground black pepper to taste
1/2 cup freshly grated Parmesan cheese
Additional Parmesan for accompaniment
Cook pasta al dente, according to package directions. Place in a large, warm serving bowl.
Meanwhile, place chicken and Cajun seasoning in a bowl and toss to coat.
In a large skillet over medium heat, sauté chicken in butter or margarine until chicken is tender and golden brown, about 5 to 7 minutes.
Add mushrooms, bell pepper and green onion; saute for 2 to 3 minutes until vegetables are tender. Add chicken broth and bring to boil; reduce liquid volume by half over high heat.
Reduce heat to medium and add the heavy cream, tomatoes, basil and garlic powder. Season with salt and pepper to taste and heat thoroughly.
Pour sauce over linguine add the 1/2 cup Parmesan and toss well to combine.
Serve with additional Parmesan cheese, as desired.
Serves 4.

White sauce would work whith that and cajun seasonings would probly work just fine. enjoy!

heat some fresh garlic in olive oil and pour over the pasta that will taste great
