this is very nice and easy to make. take some leeks chop them up and put in a pan with melted butter in soften them and boil up some chopped potatoes. when the potatoes have cooked add them to the soften leeks and add milk as much as you want, or milk and water, mix bring to the boil and simmer for about 20 Min's. add salt and pepper to taste also add nutmeg if you like it just a pinch allow to cool and mash up with a potato masher if u like it smooth or leave chunky if you prefer. i make this regularly and everyone in my family loves it

Dice an onion, a couple sticks of celery and a couple of carrots. Saute in a sauce pan for 5 min, then cover tightly and turn heat to low. Cook for another 5-10 minutes until all is soft. This is your soup flavour base.
You can then add 2-4 cups of cups of stock (chicken, veg, etc) and anthing else you think will taste good--other veg (chopped potatoes, broccoli, corn, etc), beans, pasta, noodles, chicken, etc. Add a herb or two, (thyme is good with chicken and veg soups) and salt & pepper to taste. Continue to cook on med-low heat until all ingredients are cooked through. You can either eat as is, or blend with a blender or food processor with a little cream to make a creamy soup.
You can make a soup that has an asian flavour by adding a couple of tablespoons of both soy sauce and rice wine or dry sherry...although I personally wouldn't make this version creamy...

If you are looking for a tasty veggie soup that will not take all day to cook here you go:
*large can veg-all
*large can diced tomatoes
*chopped onion, to taste
*Lipton dry onion soup mix
Put all the above ingredients in a stock pot and fill with water. Cook until onions are tender. Salt and pepper to taste. If you want a beefy flavor you can also add a bouillon cube or two.

Here is a great soup, and it's quick and easy!
1 Lb. browned hamburger
1 large onion, diced
1 large can V8 or tomato juice
1 pkg. frozen mixed veggies: the kind with corn, green beans, peas, carrots. (you may be able to find a bag of soup veggies)
2 medium potatoes, diced.
2 beef stock cubes
garlic powder and Italian seasoning, salt, pepper
Water.
Brown hamburger with onion and drain well. Set aside. Pour juice into large pot. Add ground beef and other ingredients with enough water to cover mixture. Bring to boil. Reduce heat and simmer until potatoes are soft. Check your seasonings. You can add water if needed. Sometimes I add 2 cups chopped cabbage toward the end of cooking time, cooking until cabbage is tender. Yo may also add any leftover veggies. Serve with cornbread, or grilled cheese sandwiches. Very good!

chop up onions, braise them in a small bit of oil, add 2-3 cups of water, 2 grated carrots, half a cup of red lentils, 1 grated potato and a few sprigs of parsley, chopped up. Your soup does not have to be heavy to be a soup, light soups are more healthy because they get absorbed quicker into the bloodstream and they still contain loads of vitamins but also lots of much needed water/moisture. French call light soups, consommé's. Enjoy this with toast or healthy brown bread.

Baked Potato, Sour Cream and Bacon Soup
1 tablespoon butter or margarine
1/4 cup chopped onion
1/4 cup chopped celery
1 (14 1/2 ounce) can chicken broth
1 1/4 cups milk
2 medium baking potatoes, baked and cut into 1/2-inch cubes
1/4 teaspoon salt
1/4 teaspoon pepper
8 slices bacon, crisply cooked, crumbled and divided
2 tablespoons green onions, divided
1/4 cup sour cream
Melt butter in heavy saucepan. Add onion and celery; cook and stir until crisp-tender. Add broth, milk, potatoes, salt and pepper; bring just to a boil, stirring constantly.
Slightly crush potatoes with spoon. Reduce heat to medium-low; simmer 5 minutes, stirring frequently. Reserve 2 tablespoons each bacon, cheese and green onions for toppings. Add remaining bacon, cheese, green onion and sour cream to soup just before serving. Cook until cheese is melted, stirring constantly. Serve topped with bacon, cheese and green onions.

Yeah I just made this yesterday. It's my own recipe:
Split pea/vegetable soup
8 oz (or more) of dried yellow split peas
add to about 5-7 cups of chicken or vegetable broth along with:
four potatoes: peeled, cubed, and washed
1/2 lb green beans
Bring to boil, cover, and simmer for about 30 minutes.
Add one or two chopped zucchini to the soup and cook for 15 minutes more.
This is delicious and so good for you.

Carrots onions, celery, diced turnip, little bit of pasta, stock cube, tin of soup or tomatoes seasoning. Lovely.
Or barley soup made with chicken.
Boil your chicken legs then remove them and take out the bones, pot herbs onion carrots leek and celery and barley add a chicken stock cube. It is very good for you this soup.

Chop your veggies into small chunks, add stock or stock cubes and water, salt and pepper and some herbs to flavour. Simmer till all cooked then put through an electric mixer (the jug). Taste and add either more liquid if needed or more flavourings.

The basis of a good soup is a good STOCK,it can be beef,chicken,lamb or even vegetable.
Prepare your stock and strain,add your freshly prepared and diced vegetables,season and simmer for 1 hour, check seasoning sprinkle with chopped parsley and serve.
