Take 1lb ground beef ( at least 85% lean ) & add 1 envelope Lipton onion soup mix, 1 can tomato paste, 1 egg, about 10 - 12 Ritz crackers - crushed & salt and pepper. Bake @ 350 for about 30 - 40 minutes, then pour a little Heinz 57 over the top & place back in oven for about 10 more minutes.....Wonderful, quick & easy!!

I just make mine as I would hamburger patties but roll it and put in loaf pan and bake for 45 min - 1 hr at 350 oven but..
You can try the following
Old Fashioned Meatloaf
you'll need:

To pounds of lean ground beef
Two cups of bread crumbs.
Worcestershire sauce.
3 Eggs.
A can of tomato sauce (around 15 ounces or so).
Ketchup.

Just a heads up - Substituting salsa for the tomato sauce is very good if you want a little extra kick to your meatloaf. Adding chopped onions to the overall mixture is also very nice.

Step 1:

Mix the eggs up in a small bowl or a food processor.

Combine the ground beef, four or five shots of worcestershire sauce, the eggs, the tomato sauce, and the bread crumbs in a large bowl. Keep the ketchup to the side for now. Mix it all up with your hands until it becomes somewhat thick. Once it's thick you can form the 'loaves' on a baking sheet. When you have the loaves formed add a layer of ketchup to the top as if it were icing. Add pepper or garlic powder if you want to.

Now put it in the oven for one hour at 375F. Ovens are obviously all different but meatloaf is hard to mess up. If you're unsure of whether or not it is done you can insert a fork in it. If the fork comes out clean it's probably done. You should also notice, when it's nearing completion, that the edges will be browning.

Step 2:

Once an hour has passed you can remove it...

Well this is what I do and I have never had any complaints!! I take about 3 lbs of hamburger meat ,1 med onion diced, 3 eggs, 1 cup bread crumbs, and 1/2 cup milk and mix it is a bowl, then I add all the seasonings that I like ( Salt, Pepper, Garlic all seasoning, and paprika) then at the end of it I take some ketchup and rub it all over the top of it once formed in to the pan and I bake it for about 1 hr 45 min at 400 in the oven and check it to see if it is done after the time cooked if not cook for 15 more min until done..check with a knife or toothpick..

I will tell you this comes out wonderful.. Soft and great tasting.. Hope this helps!!

This is the easiest meat loaf I have ever come across and it is very good.

*1 lb ground beef (or use 1/2 lb ground beef and 1/2 lb ground pork)
*1 egg
*about 1/2 handfull of rolled oats
*small onion, finely chopped
*squeeze ketchup

Put all of that in a bowl and mix with your hands. That is the best way to make sure it is all combined. You may want to cool your hand in some cold water first so it is easier to work with. Form it into a loaf shape and place in a baking dish. You can squiggle ketchup on top or cover with a can of diced tomatoes or a can of peas depending on your taste. Bake at 350 until the center of the loaf reaches 160 degrees. Remove from oven and let rest for about 10 minutes so the juices can redistribut before cutting.

You can also use this same recipe for meatballs. I just roll into 1 inch balls and place on a baking sheet. Bake at 350 until browned and then toss with your favorite sauce.

Put an egg in bowl and stir. Add dry onion soup mix (1 pkg) Add some ketchup or tomato sauce about 1/2 cup. Add some dry bread crumbs. Can use croutons smashed up. Put in the hamburg and put all in a plastic baggey and squish up good with your hands. This will help it stay together when cooked and not fall apart. Cook about an hour 370 to 400 degrees. Also, put some ketchup or sauce over the top.

1 pound hamburger
1 package of crackers (just one of the four that come in a box)
1 egg
Onion to your taste
A squirt of ketchup
Salt and pepper to taste
(sometimes I add a few shakes of steak sauce if I have it for flavor)

Mix all together
I put alittle water in the bottom of my pan, just enough to cover the bottom.
Shape and put into pan
Bake at 325 for about an hour....this could vary depending on how thick and round you make it....so just take a knife and check the center.
Then about 20 minutes before it is done, spread ketchup on the top and finish cooking.

You can add anything else you want like green peppers, hot sauce, whatever you like....it's your meatloaf.
