There is no replacement to baking soda or baking powder.

Don't add the baking soda. All it really does is leaven whatever you are making. Maybe add a little extra egg white and whip it up right before you pour it on the grill. Once again - yeast is a leavening agent too. It will really just make a crepe like pancake if you forget the baking powder - not really a bad thing, just different.

use self rising flour.1 egg and milk
all purpose flower is what you need baking powder for
