i love cooking with tomato sauce but i get acidity after. i tried putting butter in it but it doesn't really help. tried putting sugar but it just tastes even yuckier. any suggestions?

add some dark brown sugar to it and maybe some more spices like a little sea salt + olive oil. My sauces come out pretty good and I use a lot od garlic, brown sugar and I also dice (fine) fresha roma tomatoes. Also, I always start out with cooking up garlic, mushrooms, onions (adding last the tomatoes) in olive oil with sea salt, thyme, basil, oregano, fresh ground pepper and rosemary. Then I add the sauce base simmer and add the dark brown sugar when it is simmering. Let it simmer a long time on low.

Usually when I cook with curry or tomato sauce/ paste I add a little sugar. Note there are 100's of different curries in the world and they do taste VERY different.

a tsp of sugar per an entire pan of tomato sauce should do that trick but you should never add more than a tsp, if you find its still not working for you, then add a little balsamic vinegar. it brings out the flavour of the tomatoes and take all the acidity away, i know it sounds like it should do the exact opposite but trust me it works, i work as a chef for a living. but not too much, about a tbsp for a normal size pan full. good luck

Kind of depends on the end product...If you are making an Italian dish, you can use a little fresh garlic and basil to sweeten it up a bit, If you are doing Mexican, try a little mild chili or cummin. Sometimes, believe it or not, a little salt will enhance the flavor of your sauce, and cuts down on the acid.(try this yourself,eat a wedge of tomato plain, then try it with a dash of salt).

How much sugar did you put in it. Just put in 1 level teaspoon of sugar in it if you are making a large pot of sauce.

maybe you are adding too much sugar. sugar should do the trick. thing is you are dealing with tomatoes and tomatoes have a high acidity. you cant just make it go away.

a little sugar --basill--bay leaves and simmer for 20 more minutes. I promise this works use small amounts to taste till you get it right.
