This is my favorite Thanksgiving pie to make and eat, especially served with Bourbon whipped cream!
Sweet Potato Pie
3 lbs. Yams
1 stick of butter
1 cup sugar
1 cup brown sugar
1 tsp vanilla
1 can evaporated milk
2 eggs
1/2 tsp nutmeg
1/2 tsp ginger
1/4 tsp clove
1/4 tsp cinnamon
Pre-heat your oven to 400°F. Boil the yams with the skin on until fork tender.
Place yams in a collander and run cold water over them to assist you with removing the skins.
Beat yams on medium speed, stopping frequently to remove strings from the beaters. Once the strings are removed, add butter and continue to mix. Then add remaining ingredients. You may need to adjust the nutmeg and sugar to your tastes. Continue mixing your batter until it has a smooth consistency.
Pour your batter into your favorite unbaked 9 inch pie shell, sprinkle a dash of cinnamon on the top and bake for 50 minutes to 1 hour.(Tip: Brush the edges of your pie shell with ice water during baking to prevent it from burning before the pie is actually done). Brown specs on the top of the pie are an indication that your pie is done. You can also insert a knife in the middle of the pie, and if it comes out clean it's done! Let cool for at least 1 hour before cutting and serving.
Cream Cheese Pecan Piecrust
4 tablespoons cream cheese
2 tablespoons sugar
1 teaspoon vanilla extract
2 tablespoons evaporated milk
1 large egg
1 cup all-purpose flour
1/4 cup finely crushed pecans
1/2 teaspoon baking powder
1/4 teaspoon salt
Combine first 3 ingredients in a bowl; beat well at medium speed of a mixer until smooth. Add milk and egg; beat until well-blended. Add flour, peacans, baking powder, and salt to bowl, stirring until well-blended.
Press mixture gently into a 4-inch circle on heavy-duty plastic wrap; cover with additional plastic wrap. Chill for 15 minutes. Roll dough, still covered, to an 11-inch circle. Place dough in freezer 5 minutes or until plastic wrap can be easily removed.
Remove 1 sheet of plastic wrap, and fit dough, plastic wrap side up, into a 9-inch pie plate coated with cooking spray. Remove top sheet of plastic wrap. Press the dough against bottom and sides of pan. Fold edges under, and flute. Fill and bake the crust according to recipe directions.

Cranberry Pecan pie is the BEST!!!
It's just a regulr pecan pie with drie cranberries added in, but the tart berries et of the too-sweet pecans & sugar cream so nicely!!
Served warm with a scoop of vanilla ice-cream it's just the most fantastic thing!!

my favorite pie is apple and peacon
my mom makes her apple pies home made. she uses granny smith apples. Yum!
i love peacon pie, too. it is reallysweet and has a nuty taste that makes me want to go NUTS! LOL

and i know you americans dont go in for it, but chicken and mushroom pie is to DIE for with mashed carrots and sweet potatoes
