I can understand blinking when something's about to hit your face, but why the wide eyes?

I would guess that it is to see better as well as 'you can't believe your eyes'. However people who strain to see things better actually squint to focus on it.

So I reckon it is just a side effect of raising one's eyebrows at the surprising information... Just another facial expression designed for communication, like smiling or frowning :S.
