An old-fashioned sweet potato casserole recipe with eggs and chopped nuts.

INGREDIENTS:
4 cups sweet potatoes, mashed
1/4 cup butter, softened
1/2 cup sugar
3 eggs, beaten
1/4 teaspoon salt
1/4 cup pecans or walnuts, chopped

PREPARATION:
In large mixing bowl, beat together yams, butter, sugar, eggs, and salt until fluffy. Turn into a 1 1/2-quart baking dish and sprinkle with pecans or walnuts. Bake at 350° for 45 minutes. Serve immediately.
Serves 6.

I live in a small town that prides itself on being the "Sweet Potato Capital of the World", which, it pretty much is as a large portion of our potatoes are used to ship, sell, in babyfood, etc. (Gerber has a contract with several of the farms around here). I also frequently go to a little shop called "Sweet Potato Sweets" and I have never heard of "Sweet Potato Scuffle". Maybe you're thinking of a soufle?

Anyway, I did some looking on google, ask.com, etc. I couldn't find a thing so try the first link below. If you can't find anything, try the second link below and contact those people. If they've never heard of it, it doesn't exist.

It's a Scuffle made with Sweet Potatoes

Sweet Potato Souffle
1 (14-1/2 ounces) can mashed sweet potato
1 cup sugar
1/4 cup milk
1 teaspoon grated orange rind
2 tablespoons fresh orange juice
1 teaspoon vanilla extract
2 large eggs, lightly beaten
2/3 cup all-purpose flour, divided
1/2 cup butter or margarine, melted and divided
1 cup chopped pecans
1 cup firmly packed brown sugar
Stir together first 7 ingredients, 1/3 cup flour, and 1/4 cup butter; pour into a lightly greased 13- x 9-inch baking dish.
Combine chopped pecans, brown sugar, remaining 1/3 cup flour, and remaining 1/4 cup butter; sprinkle over potato mixture.
Bake at 350 degrees F (175 degrees C) for 40 minutes or until bubbly.

Do you mean SOUFFLE? If you do, it's delicious!

MICHIE's SWEET POTATO SOUFFLE:
3 lbs. sweet potatoes, peeled & cut into cubes
2 eggs
1/2 cup brown sugar - divided
1/2 cup butter - melted - divided
1 teaspoon salt
1 teaspoon ground cinnamon
up to 1/2 cup orange juice
1 cup chopped walnuts
large marshmallows
In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain. Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon. Starting with 1/4 cup orange juice, make mixture moist and fluffy. Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top. Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.
