you have to set the oven real low, 200F works well. the potatos(or anything really) have to be sliced very thin. brush them with a little egg white, or just dip them in a bowl of whites, and bake them for about two hours maybe even longer depending on where you are. oh and season them before they go in, its not hot enough to burn the salt or anything else you would season chips with. just pull a sample off after a couple of hours and see if its crispy enough for your tastes. you can also do this in a dehydrator

Absolutely no oil? You may have to use a dehydrater instead of an oven. I'm not sure how you would keep them from sticking to the tray, unless you use silicone.

If you can use a little oil, oven fries are a good substitute. Take 200 g. of frozen shoe string potatoes and toss them with a tablespoon of olive oil. Season with season salt, then bake in a 200 C/400 F oven for 10 to 20 minutes (watch carefully so they don't burn). Some come out very crispy and good! And the others are pretty yummy, too.

In the oven at 400 degrees for about 10-15 min. Thing is they will taste more like french fries then potato chips. If you plan on salting them then you might as well fry them seeing how salt isnt to great either. If you fry them use peanut oil and heat it to about 360 degrees, cook them for about 1-2 min. This will flash fry them and they wont end up being oily and they will be nice and crispy. Peanut oil once cooled down can be thrown outside and is actually good for the enviorment.

Oven-Baked Potato Chips

Pam spray olive oil
1 russet (baking) potato, about 8 ounces, scrubbed
1 teaspoon crumbled dried rosemary (optional)
Salt to taste

Spray two baking sheets lightly with some of the oil. Using a mandoline or hand-held slicing machine slice the potatoes crosswise 1/8-inch thick and arrange them in one layer on the baking sheets.
Spray slices lightly with the oil and bake in a preheated 375 degree oven for 25-30 minutes or until they are golden throughout. (They will brown at different rates.)

Transfer them to paper towels and sprinkle them with salt and rosemary, if desired, while they are still hot.

you can bake them in the oven and get 1/2 the fat of regular. pot. chips
