to be on the safe side (I hate it when there aren't leftovers because you don't know whether there was enough), I'd go for 180gm of meat per person, so about 3.6 kg if you're using boneless meat and 4.5 kg if you're using whole chickens.

For the recipes I know, about one 3 lb (when whole) chicken will serve six. So, three regular sized whole chickens should do it.
