I recently moved and would like to keep my car as a joint ownership with my parents, but need to get a new DL in my new state because I am working and not in school. Anyone think this is legal/possible?

all states have different regulations. In AZ you are required to change both, however I have changed only my license and have not had any problems so far.

As long as you let your parents get the vehicle licensed in their name and in the state they live in, yes you can. If you get stopped, tell the officer that it is your parents car when he or she asks. Don't readily volunteer the info, but don't hold it back either. When you have to show license, registration, and proof of insurance, it is going to bring up a question in the officer's mind as to why you are driving a car not registered to you. So if this happens just tell him/her that it is your parents car and you had to borrow it for awhile. No need to give your life's history just for a traffic ticket. Be sure though, and talk to your parents and have them tell the same story - that you just borrowed it from them. That is, talk to them NOW and get the story straight so that if it should ever come up, that both stories match. As long as you are covered under the insurance policy for that car, then there should be no problem at all doing what you want to do.

i think you can get another driver's license without changing your registration and license plates; but you can't change registration without changing license plates or vice versa.
