a convection oven, sometimes called fan assisted means that there is a fan inside that can move the heat around in the oven.
convential oven is simply an enclosed space that is heated by either gas fire or electric heaters.

ITS ALL ABOUT CURRENTS DUDE! conventional currents heat up the surface gradually approaching the center, but convection heat the whole product for instance the inside and the outside of a chicken.
