Pecan Pie Recipe 2 eggs, slightly beaten 1 cup light corn syrup 1/4 cup brown sugar 1 Tbsp molasses 2 Tbsp melted butter 2 Tbsp flour 1/4 teaspoon salt 1 teaspoon vanilla 1 1/4 cups pecans, coarsely chopped 1 9-inch pie shell, chilled for an hour if freshly made, defrosted for 10 minutes if frozen Preheat oven to 375°F. Spread pecans along the bottom of the pie shell. Mix the remaining ingredients and pour over pecans. The pecans will rise to the surface of the pie. 2 Bake at 375°F for 45-50 minutes until the filling has set. About 20 minutes into the cooking you may want to use a pie crust protector, or tent the edges of the pie crust with aluminum foil to prevent the pie crust edges from burning. 3 Remove from oven and let cool completely

Here's my recipe for Almond pie, (pecan pie is the same just substitute pecans for the almonds).

If you want pecan-less pecan pie, make the recipe without the nuts and substitute pecan extract for almond extract.

For the crust:

1 ½ cups flour
1/8 cup sugar
1 ½ sticks cold salted butter
Ice water as needed

For the filling:

6 oz. crushed, chopped or slivered almonds
4 eggs
1 cup sugar
½ cup light corn syrup
¾ teaspoon almond extract
¾ teaspoon vanilla extract
½ stick of salted butter, softened
1 tablespoon flour

Add the flour and sugar to a food processor and then add the butter, one chunk at a time, and pulse just enough to incorporate it into the dough. A coarse meal is the target consistency. Add the water in tablespoon increments, again just pulsing the processor enough to incorporate it until a dough is formed. Scoop it out onto a floured board and lightly knead it for about a minute. Form the dough into a ball, wrap it in plastic wrap and allow it to rest in the fridge for at least an hour.

Preheat your oven to 375 degrees. After the dough has rested, roll it out on a floured board to fit a 9-inch pie plate. Line the plate with the dough. Mix all of the ingredients for the filling in a bowl until just incorporated. Pour the filling into the pie and bake for one hour or until the filling sets. Cover the pie with aluminum foil to prevent the top from over-browning.

Classic Pecan Pie

Prep Time: 15 minutes
Cook Time: 55 to 60 minutes
Yield: 1 pie
3 eggs
1 cup sugar
1 cup Karo Light OR Dark Corn Syrup
2 tablespoons butter OR margarine, melted
1 teaspoon vanilla extract
1-1/2 cups (6 ounces) pecans
1 (9-inch) unbaked or frozen** deep-dish pie crust
Preheat oven to 350°F.

Beat eggs slightly with fork in medium bowl. Add sugar, Karo Corn Syrup, butter and vanilla; stir until blended. Stir in pecans. Place pie dough in pie pan. Pour pecan filling into pie crust.

Bake 55 to 60 minutes or until knife inserted halfway between center and edge comes out clean. Cool on wire rack.

**To use prepared frozen pie crust: Place cookie sheet in oven and preheat oven as directed. Pour filling into frozen crust and bake on preheated cookie sheet.

TIPS: Pie is done when center reaches 200°F. Tap center surface of pie lightly - it should spring back when done. For easy clean up, spray pie pan with cooking spray before placing pie crust in pan. If pie crust is overbrowning, cover edges with foil.

The best pecan pie recipe can be found on the side of a Karo syrup bottle. Have you ever tried a chess pie?
