Here is the recipe of "Dhan-saak":
Ingredients: [for six people]
1. 1/2 kg oiled tur dal
2. 1 kg mutton
3. 2 bunches of methi [the small variety which is grown in sand]
4. 150 gms red pumpkin
5. 50 gms tamarind
6. 1 table spoon salt [as per taste] -masala
7. 1 1/2 table spoon red chili powder -masala
8. 1/2 teaspoon saffron -masala
9. 1 1/2 tablespoon "dhania-jeera" powder which one gets specially for dhan-saak at Motilal's [grantroad] -masala
10. 1 1/2 tablespoon Dhan saak powder from Motilal -masala
11. 1 table spoon ginger-garlic paste -masala
12. 4 - 5 chilies slit down the middle. :)
13. 1 one big onion
14. 4 tablespoon refined groundnut oil
Recipe:
Boil mutton in the cooker till ready [for 15 - 20 mins] keep it aside along with the stock.
Take the cooker, put the oil, cut the onion and put it to fry. when it is light brown, put the ginger garlic paste and all the other masalas mentioned and fry for about 4-5 mins, add very little water and let it simmer.
Cut the methi, cut the red pumpkin into cubes and add them to the masala.
Add the dal and shut the cooker and let it stew for the duration of four whistles.
Open the cooker, mix the contents with a hand-mixer.
Now add the mutton along with the stock [of the mutton] - do NOT let the dal become very thin - if the stock is a lot then you don't have to add all of it.
Put the tamarind in lukewarm water and squeeze its juices within the water then put just the water into the dal. [not the squeezed tamarind]
Then close the cooker and put it again on the fire and let it simmer on a slow stove for about five mins.
The dhan sak is ready to serve-.

Prefrable Time : Lunch/Dinner Serves (approx.) : 6
Ingredients:
Mutton 1 Kgs Tur dal 200 Grams
Masoor dal 200 Grams Red pumpkin 200 Grams

Ghee 1 Cup Green chillies 3 Nos
Tomatoes 2 Nos Ginger garlic paste 3 Tblspn

Onion 2 Nos Dhanajeera pwd 2 Tblspn
Dhansak masala 2 Tblspn Salt to taste
Preparation:
Boil dals with boiled mutton pieces, vegetables, turmeric & salt till done. Mix ginger, garlic, cummin, criander, black pepper. Heat ghee in a pan & fry onions till brown. Add masala & fry and add in the dal. Add dhansak masala(Kasoori methi, cloves & Black cardamom mixed in equal propotion & powdered) & mix well

Mutton Dhansak
2 large Onions, chopped finely
150g Tomatoes, chopped
150g bottle gourd, or squash, finely chopped
4 tbsp chopped red pumpkin
4 tbsp chopped fenugreek leaves
6 tbsp chopped coriander leaves
6 tbsp chopped mint leaves
150g split yellow lentils, (toor dal)
300g mutton, trimmed and cubed
1 tsp ground turmeric
1 tsp Chilli powder
1 tsp Sugar
450ml water
4 tbsp distilled vinegar
1 tbsp sunflower oil
1 tsp cumin seeds
Salt
Tip the onions, tomatoes, gourd (or squash), pumpkin, fenugreek, coriander, mint, lentils, lamb, turmeric, chilli, sugar and water in a large heavy saucepan. Cook until the lamb and lentils are tender – about 1 hour.
Mash the vegetables and lentils with a wooden spoon, taking care not to break the meat.
Add the vinegar and stir.
In a small frying pan, heat the oil. Fry the cumin seeds over a low heat, until they take on a nutty aroma – about 2 minutes. Scatter the cumin over the curry.
Simmer for a further 5 minutes and serve hot with brown

500gm mutton

50gm tuvar dal(split gram)
50g moong dal(green gram)
1 bunch of spinach
1 medium bunch methi leaves (fenugreek)
100gm eggplants
100gm potatoes
50gm beans
100gm carrots
Dhansak masala:
3 tsp chili powder
1/2 tsp turmeric powder
1/4 nutmeg powder
2 tsp garam masala
1/2 cup oil
Salt to taste
For Garnishing:
3 tbsps deep fried onion slices(browned)
2 tbsps green coriander leaves,chopped
few quartered lemon pieces
Method:
Pressure cook the dals, vegetables with half mutton,for few minutes.
Blend with spinach green chilies and salt to a fine paste .
Boil the remaining half of the mutton and keep aside.
Heat oil in a pan,fry fenugreek leaves and add onions, ginger-garlic paste,
dhansak masala,fry for 2-3 minutes.
Add chopped tomatoes, mutton pieces, dal-vegetable-mutton paste and cook for another15 minutes.
Serve with rice or rotis.
