The colour of the shell is determined by the loose flap of skin on the chickens head - if it is light in colour or bright red the eggs will be white - if it is brown, or black the eggs will be brown. The colour of the shell has nothing to do with the contents - the stores charge more because of the urban myth that brown eggs are healthier.
