Any oil can be substituted, but the flavor might be different. And I give credit to the applesauce suggestion--that's a good one. It gets a thumbs up!

Applesauce. It will reduce the amount of calories and cholesterol in the cake, plus make it very moist and tasty!

It may depend on what kind you're making, but once in desperation I melted margarine and used it in place of oil and it turned out O.K.
