if there are drops of water in the oil , oil bursts . Also if the substance which is in the hot oil does'nt have vent to let the steam out , it will burst . Its the principle of physics , at constant volume , pressure increases(in the substance) when the temperature increases . Thats the principle for pressure cooker also.

It is small drops of moisture on the food being heated until the moisture becomes a gas. Dry the food as much as possible (not really possible with battered foods I know), learn to duck or buy a special cover that keeps the grease in but lets vapor out.

Yep too hot. The liquid in the food you are cooking is what causes oil to splatter if it's too hot.

Check if there is water on the pan-- it causes spattering.
May also be temperature if you're in the middle of cooking.

You're probably letting it get too hot therefore burining it and any moisture that comes in contact with will cause it to "burst".

there's water in your pan, you might wanna make sure its totally dry before you pour the oil into the pan.
