"Candied Yams" - 6 servings

4 yams or sweet potatoes; unpeeled
1 tsp. salt
1/2 cup butter or margarine
1/2 cup packed brown sugar
1 tbsp. grated orange peel
1/4 cup orange juice or water
1/8 tsp. ground cinnamon
Generous dash pepper
1/2 cup coarsely chopped walnuts (optional)

1) In 4-quart saucepan, place yams and salt; add water to cover. Over high heat, heat to boiling. Reduce heat to low; cover and simmer 30-40 minutes until yams are fork-tender. Drain; cool slightly. Peel and quarter yams.
2) In same saucepan, combine butter, brown sugar, orange peel, orange juice, cinnamon and pepper; heat to boiling. Add yams and nuts; heat until yams are glazed, spooning sauce over to coat.
SWEET POTATO CASSEROLE: Use ingredients as above, but omit walnuts. Prepare as above in step 1. Butter 2-quart casserole. In large bowl with mixer at low speed, beat potatoes and remaining ingredients until light and fluffy. Spread potato mixture into prepared casserole. Top with 2 cups miniature marshmallows. Bake at 375* - 15 minutes or until topping is golden.

Candied yams?

My momma'd get a couple of cans of Sugary Sam's yams, smush 'em up, dump 'em in a Pyrex dish, and put a bunch of mimi-marshmallows on top. Toss it in the oven and bake 'til the marshmallows got brown. Not a lot to it. Oh...raisins, too. She'd mix some raisins in with the yams.

3/4 cup brown sugar, 1 teaspoon salt, 1/4 cup butter, a pinch of nutmeg & cinnamon, add 1/2 cup miniature marshmallows. My mother always baked them in a foil-lined & foil-covered pan, but she always used the fresh yams instead of the canned ones because Southern cooks like to prepare their food "from scratch".

I hope this helps.

African Americans did adopt the fried food technique because years ago it was easy, but if it's done correctly, the grease doesn't remain in the food or breading, so I wouldn't call it dangerous. I'd say the habit of many americans drinking soda and eating sweets is far more dangerous than anything African Americans produce. Dude, you need to go on a road trip and taste some New Orleans, Jamaican style, and so on. Edit... darn, I did it again. Sorry. I missed the part where you said you're in Britain. I do that frequently.

It all depends on how sweet you want it. Put in a lil bit of butter to and to add a little taste add some pecans.
