I like making quisidillas. Basically just take the flour tortilla put it in a pan on the stove and melt the cheese in it. My mom put butter in her pan, than the tortilla, which is really good too.

These are my two fave simple things to make and eat at home:

Grate some of your favourite cheese and sprinkle it over a thickly sliced piece of country-style bread. Sprinkle with some freshly grated pepper and place some freshly sliced tomatoes over the cheese. Broil until toasty and bubbly.

My other tasty, simple dish is to combine a 1/2 cup of your favourite museli with a cup of fruity yogurt, mix to combine and add some fresh blueberries and a grated granny smith apple. It's best to let it sit overnight, that way the museli soaks up the moisture of the yogurt and becomes soft and delicious...!

Egg and Cheese Breakfast Sandwiches

Ingredients:
2 slices of American Cheese
2 English Muffins, or 2 slices of bread
2 eggs
margarine or a spreadable butter

Fold the cheese slices in half to make 4 pieces.
Split the muffins, or if you used bread, cut them into halves.
Fry two eggs. Pierce the yolk on top with a knife.
Spread all 4 muffin halves or bread halves with margarine.
When the eggs are done, set them aside (they stay hot). Throw the muffins or bread in the pan, buttered-side down.
Remove them when they just get a little bit of browning underneath.
Put a cheese slice on each buttered half of bread, then put an egg inside 2 of them, and use the other 2 to top off the sandwiches.

Yum. Tastes a lot like Egg McMuffins. Not bad for about 25 cents each. And good if you're craving restaurant-rich food.
If you use bread it gets really moist -- doesn't bother me, but dry bread probably fixes it.

Chicken Spaghetti

1 chicken boiled and de-boned
1 can cream of chicken soup
1 can rotel
1 10 oz package spaghetti noodles
10 oz velveeta cheese

Biol and debone chicken. Use chicken broth to boil spaghetti. Cut velveeta into small chunks and mix with margarine. Let sit at room temperature for 20 minutes. Mix chicken soup and rotel, add chicken and spaghetti. Mix cheese last. Bake at 350 for 20 minutes. If mixture is dry add 1/2 cup milk or 1/2 cup chicken broth.

Mexican Chicken

Biol 1 pack chicken breasts
hold 1 cup broth
1 velveeta cheese
1 can cream chicken
1 can chicken broth
1 can cream of chicken
1 can rotel
1 large bag Doritoes

Boil chicken, after full boil, add chicken broth, Let cool and debone, mix together rotel, cream of chicken, and 1/2 box cheese. If runny, add more cheese. Line ban with butter and pour 1/2 doritoes in bottom of pan, add chicken mixture and top with doritoes. Bake for 10-20 minutes until warm and cheese is melted.

I make a granola mix that is really good, i eat it plain but you can also put milk over it. And its very healthy!

Box of Old fashioned Oatmeal
Crushed Nuts
4 tbsp of brown sugar
Butter
dried fruit ( i use raisins, cranberries, and strawberries)

Poor the Oatmeal and nuts onto a cookie sheet
Melt about a 1/2 cup of butter and pour the brown sugar into this. Poor this over the oatmeal and bake it for about 15-20 minutes.
When done put the fruit in. Its DELICIOUS!

I guess my favorite is the only one not made completely from scratch, but I buy a box of 3 cheese bagel bites, add a spoonful of my favorite spaghetti sauce and a slice of fresh tomato to each one. Bake 10 mins, then broil for a few more. I eat 'em with a fork and knife. Yummy.

I actually have two. One for just me and one for when friends come over.
The one for me is an Italian salami sandwich:
I Sourdough sandwich bun
2 Tbls Garlic butter
1/2 c Grated mozzarella cheese
8 slices dry Italian salami
Cut Bun in half lengthwise and spread w/ garlic butter. Sprinkle cheese on 1 half and lay out slices of salami to cover other slice. Place under broiler til cheese melts. (Be careful not to burn it, as it takes just a couple of minutes.) put two sides together and enjoy.
The other is Stone Soup. When invite friends over I have them bring their favorite veggies. We cut them up and throw them in beef or chicken stock, then socialize for the hour it takes for them to cook. The idea came from a children's story I read once.

Ok on the dessert side I like to make this. I don't know the name of it so i gave it the name mooklook. ( Don't ask lol) But all u need is:
jello powder cool whip and cottage cheese.
Mix cottage cheese and cool whip together and pour half a bag or how much you want of the jello powder, mix and enjoy. The more jello powder you put in the sweeter the dessert so be careful to how much you put in.

I love to make a simple (and cheap!) seafood pasta. Take a box of pasta (can be bowtie, angelhair, penne, etc.) and cook it. After it has cooked, drain the water out and put into a bowl. Then, mix in pre-cooked shrimp, crab, or immitation crap meat to your liking. After that, add a can of alfredo sauce [Bertoli is one of the best] and 1 cup of peas [preferably the frozen kind, since the canned kind can get mushy] and mix. Voila! Dinner is served for 2 to 4 people.

Cheezy Nachos
1lb ground beef, cooked and drained, chopped fine
1 pouch taco seasoning.
1 jar cheez whiz
1 bag extra-thick tortilla chips
Chopped tomatoes, shredded lettuce, chopped onion, sour cream, chives, etc.

In skillet, brown beef. Add 1 cup water and taco seasoning, cook down to desired thickness. In bowl, combine beef and cheeze whiz. Microwave until warmed. Pour over Tortilla chips. Top with desired toppings.

Hobo Stew. You brown some ground beef with onions, garlic, bell peppers. Then you get a big pot and put the ground beef mixture in the big pot; add 1 can of diced tomatoes, 1 can of water, 1 can of diced potatoes (undrained) and then 3 cans of different kinds of your favorite beans (undrained). Season it with 1 tsp of oregano, 1 tsp of chili powder, 1 tsp of cumin. Bring it to a boil, then simmer for at least 30 minutes.
