Definitely Peanut Oil You can buy it bulk in the grocery store now. And use a sifter and drain and save it in a container. In frig is good in case there are left-behind particles of food.

All polyunsaturated fats (liquid oils) WILL go rancid. To slow this down, store it in your fridge.
Peanut has a high smoke point, and can be strained even after frying fish to fry donuts or FF. Canola oil is very light in flavor and texture, though, and gives a good result. Most oils can only be reused twice, but you may get a 3rd use out of peanut oil.

Peanut Oil has the highest smoke point and if you strain it between uses you can store it covered for up to a month.
If you don't use that, your next best bet is vegetable oil. Olive oil doesn't have a high enough smoke point.

canola or vegetable oil. Olive oil isn't very good to use for deep frying.... it burns easily.
