how can I know what is the % according to my income and exceptions?

The IRS publication linked below contains withholding tables. You need the filing status as well as the income and exemptions to look up the withholding amount.

BTW nothing is withheld 'from' taxes. You mean how much is withheld 'for' taxes.

First estimate your taxable income: income minus allowances -$3300 each for you your spouse and any kids; minus standard deduction (if you don't itemize) - Married filing jointly or Qualifying widow(er), $10,300; Head of household, $7,550; Single or Married filing separately, $5,150

Then look at page 84 for a rough guide:

(note that there are different tables for each filing status (single, married etc.)

This is only a rough guide for the entire year and not exact.

How much should?
0% should be withheld!!!!!!!!!
But the government takes about 28%.

Check out that site,But also keep in mind ALL the taxes that are hidden, Regulations that are put on everything, everything!!! All trickle down to the consumer, It"s simple economics, Businesses don't pay taxes, people do.
