Usual portion size is to plan for 1/2 pound of turkey per person when using a whole turkey. I always plan a little more to have leftovers. As far as actually serving, start out with a small portion, maybe 1-2 slices, and then ask if they want more- better than wasting portions.

When I made my first turkey last year, I was told by the butcher to estimate one pound for each guest. Hope that helps...

a serving of any kind of meat is 4 to 6 ounces. however i have found that people can eat a lot more then that.

Let them serve themselfs. I would hate to go to someones house and have them make my plate. That would make me never want to go back.
