Take a look at some bacteria, and I'm sure the evidence supporting evolution becames painfully evident, when the flesh-eating bacteria isn't killed off by modern antibiotics.

Evolution takes hundreds of thousands of years (if not millions of years), so you're never going to "see" it.
I don't believe in talking animals, either. To be honest with you, though, I fail to see how that has anything at all to do with evolution.
Something about your question has me suspecting that your understanding of evolution may be a flawed one. I probably wouldn't buy into your conceptualization, either.
There are several good books on the subject, though. I've included some Amazon links if you'd care to learn more. (Hopefully they're appropriate for your reading level.)

lol. If you've never heard an animal talking to you, you weren't listening hard enough.
They talk all the time. You just don't understand their language. Otherwise, what are those noises coming out of their mouths?

The theory of evolution has absolutely nothing to do with what you are talking about. Talking animals is definitely not a topic of concern amongst those of us who believe in evolution.
