A person who I have met a couple of months ago has just invited me to her wedding "tomorrow". We went out for dinner a couple of times and I don't think I am considered a close friend. What can I say to decline the invitation in a very polite way? Even a non extremist excuse would work.

Just say you can't make it on such short notice; you have other plans. It's obvious that you weren't on the initial guest list and she's just trying to fill the empty seats of people who declined. SO I wouldn't worry about hurting her feelings.

Just say you have prior plans, and thank her for the invite.
