1 pate brisee (or frozen pie shell)
4 eggs, beaten
1 scant cup dark brown sugar
3/4 cup light Karo syrup
1/2 stick butter, melted
1 teaspoon maple extract
2 cups chopped walnuts
Mix eggs, brown sugar, Karo syrup, butter, and maple extract, beating each addition. Put walnuts in pie shell; pour egg mixture over. Bake at 400 degrees for ten minutes. Reduce heat to 325 degrees and bake another 30 to 35 minutes, or until set (no serious jiggles in the middle). Cool on rack

The texture of a walnut is softer than a pecan. When I think of pecan pie, it's the texture that I want to experience. Tastewise, I have to agree that walnuts are more bitter - but you never know some of the more popular foods today started out as mistakes or were experiments in the kitchen - Good Luck!

Walnuts are more bitter than pecans so before putting them into your recipe put them in a pan with butter and a little bit of brown sugar for just a couple of minutes.

It depends on the walnuts you use. Black walnuts have bitter skin so you want to blanch them and rub the skin off. Other walnuts you use them just as they are.
