From BBC website - Swiss Roll - comes out lovely. An alternative which is also great is to add some cocoa to the mixture and then fill with choc flavoured cream - mmmm delicious.

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Ingredients
4 size 2 eggs, at room temperature
100g/4oz caster sugar
100g/4oz self-raising flour
For the filling:
approx. 4 tbsp strawberry or raspberry jam



Method
1. Preheat the oven to 220C/425F/Gas 7. Grease and line a 33x23cm/13x9in Swiss roll tin with greased greaseproof paper.
2. Whisk the eggs and sugar together in a large bowl until the mixture is light and frothy and the whisk leaves a trail when lifted out. Sift the flour into the mixture, carefully folding at the same time. Turn the mixture into the prepared tin and give it a gentle shake so that the mixture finds it's own level, making sure it spreads evenly into the corners.
3. Bake in the preheated oven for about 10 minutes or until the sponge is a golden brown and begins to shrink from the edges of the tin.
4. While the cake is cooking, place a piece of non-stick baking paper a little bigger than the size of the tin on to a work surface and sprinkle it with caster sugar.
5. Invert the cake on to the sugared paper. Quickly loosen the paper on the bottom of the cake and peel it off. Trim the edges of the sponge with a sharp knife and make a score mark 2.5cm/1in in from one shorter edge, being careful not to cut right through.
6. Leave to cool slightly, then spread with jam. If the cake is too hot the jam will soak straight into the sponge. Roll up the cake firmly from the cut end.

Swiss Meatloaf Roll

2 eggs, slightly beaten
3/4 cup breadcrumbs
1/4 cup tomato sauce
2 tablespoons fresh parsley, chopped
1/2 teaspoon dried oregano, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, minced
4 lbs ground beef
8 slices swiss cheese
8 slices proscuitto
4 (8 ounce) cans tomato sauce
Mix the first 9 ingredients together until well mixed.
Shape into 4 loaves.
Flatten each loaf on waxed paper and shape into a rectangle.
Cover each rectangle with 2 pieces of swiss cheese & 2 pieces proscuitto
Roll up as for a jelly roll.
Cover each loaf with an 8 oz can of tomato sauce (you can spice this up if you want). bake at 350F for 45 minutes or until done.

Ingredients
70g/2½oz self-raising flour
70g/2½oz cornflour
140g/5oz caster sugar
4 eggs
170g/6oz raisins
5 tbsp golden syrup
icing sugar, for dusting
extra golden syrup, for drizzling

Method
1. Pre-heat the oven to 200C/400F/Gas 6.
2. Place the self-raising flour, cornflour, caster sugar and eggs into a food processor. Blend together until a batter is formed.
3. Spoon the batter into a baking tray, which has been lined with silicone paper, then place into the preheated oven for 5-7 minutes, or until cooked and golden.
4. Remove from the oven, sprinkle the raisins on top of the base, then drizzle with the golden syrup.
5. Roll the Swiss roll up, dust with icing sugar, and drizzle with more golden syrup, to your liking.

6-8 raspberries
1 tbsp honey
icing sugar, to dust

Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Beat the eggs and sugar in a food mixer for 1-2 minutes. Fold in the self-raising flour and mix until combined.
3. Line a swiss roll tin using parchment paper.
4. Spread the sponge mix in the tin and bake for 10-12 minutes, or until golden and springy to the touch.
5. Carefully remove the sponge from the tin and lay on a flat surface. Allow to cool and then remove the parchment paper.
6. Spread the whipped cream over the sponge and then sprinkle with raspberries and drizzle with honey. Carefully roll up using a clean tea towel to form a swiss roll.
7. Transfer to a serving plate and dust with icing sugar to finish.

Shame on you Barksalot. No, you first must roll the swiss in snow, then when covered, roll him down the hill. The first layer helps the rest stick better. Cheeky lad indeed!
