i don't know if this will help, but it's a great meal the kids can enjoy making. i think you can substitute some of the ingredients if you go to a whole foods store for healthier alternatives.
It's called a burrito pie.
you start with flour tortillas (what ever size you want)
cook some chicken breasts or hamburger meat
re-fried beans
black beans
cheese (your choice)
salsa (your choice)
black olives
start with the tortilla (flat)
add the re-fried beans
tortilla
chicken or meat
tortilla
black beans
tortilla
black olives
and you continue until you have the amount that you want
when you are ready.......add some salsa on top, not too much, and shredded cheese
but in the oven at 350 f for about 20 mins and serve. you can use sour cream and avocados for garnishing.
the kids love putting this together.

EASY SPAGHETTI & MEATBALLS
The kids will love helping make this dish. They can get their little fingers in the meatball mix and squish it until it's mixed well and they will have a blast forming the meatballs. My kids helped me with this all the time. I took the easy way out for this one tho and cheated with pre-made sauce.
2 (30 ounce) jars spaghetti sauce
2 lbs lean ground beef
2 eggs
3/4 cup dry breadcrumbs
1/4 cup fresh parsley, chopped
1 garlic clove, minced
1/2-1 teaspoon salt
1/4 cup parmesan cheese
1 lb spaghetti, cooked al dente
Place sauce in a large saucepan and simmer over medium heat.
In large bowl mix beef, eggs, crumbs, parsley, garlic, salt and parmesan.
Shape into 18 meatballs.
Place meatballs in simmering sauce.
When sacue returns to a simmer, cover and cook 30-35 minutes (or more!) till cooked through.
Serve sauce and meatballs over warm spaghetti.

Sugar free jello with fruit in it, topped with cool whip. This is a great dessert (minus the fruit) if someone is watching carbs. There are also puddings that are fat free that they can help make, put them in dixie cups and freeze them for pudding pops, add sticks when pudding starts to firm up (usually only about 10 minutes after being placed in the freezer).

Double Cheese Tortilla Pizza
8 flour tortilla shells
3 c. shredded CoJack cheese
pizza sauce
Pepperoni
Preheat oven to 400. Place 4 shells on a baking sheet. Sprinkle cheese on each shell. Place another tortilla on top of cheese. Press down on top tortilla. Bake for 6 minutes. Remove from oven. Flip tortillas over. Let cool for 5 minutes. Spread top tortilla with pizza sauce and pepperoni and sprinkle with remaining cheese. Return to oven. Bake 6 minutes . Remove from oven and cut into wedges.
CUCUMBER-CARROT PINWHEELS
whole cucumbers, unpeeled
whole carrots, peeled
Cut cucumber in 3" lengths. Hollow out seeded middle section. Push a carrot into the hollowed out center of the cucumber.Slice the cucumber/carrot wheels into 1/2-inch slices. You
end up with a cucumber slice with a carrot center. Looks very attractive as a garnish and is fat free and tasty!!TIP: Try scoring the cucumber skin before cutting for an even more interesting look. Run a fork lengthwise down the cucumber skin all around the cucumber. Actually, this method makes pretty cucumber slices with or without skin.
Veggie Pizza
1 package crescent rolls
1 cup sour cream
One half cup mayonnaise
1 package dry Hidden Valley Ranch dip mix
1 cup cheddar cheese, shredded
One half cup fresh broccoli, chopped
One half cup green onions, chopped
One half cup carrots, shredded
One half cup zucchini, grated
One half cup mushrooms, sliced
1 8-oz. can sliced water chestnuts, drained and chopped
Spread out crescent rolls on a baking sheet to form a crust and bake for 10-15 minutes at 350 degrees until lightly browned. Remove from oven and allow to cool. Combine sour cream, mayonnaise and dry dip mix and spread over crust. Place vegetables over dressing and top with shredded cheese. Refrigerate until ready to serve. Cut into squares before serving.

English muffin pizzas. Split an english muffin and spread tomato/pizza sauce on it. Add a low fat/ part skim cheese, and whatever toppings you want. put in oven at 350* for 5-10 mins until cheese melts.

Stuffed Peppers
Red Bell Peppers filled with a mix of cooked rice, cooked ground beef or turkey and I like to throw in a few tablespoons of ketchup to moisten it. Place in the oven and bake.

My kids always loved making "pizza tortilla's"...they take a tortilla and put cheese down the middle..( fat free is fine ) then put whatever else they like....fold it over and put in microwave for about 20 seconds or until cheese melts......they loved it!!!
