I think someone in a lab coat was probably not in need of monetary help. I think someone fasting in the desert was spiritually avoiding food and they were ok. I want my tithing to go to someone in need, be it financial or spiritual.

A silly question really.
Would you rather beat your wife or your daughter?
Whether someone is wearing a lab coat, or a fur coat, or no coat, and whether someone is fasting in the desert or feasting on an ocean liner, would hardly be criteria for anybody to direct charitable contributions.
People direct their tithes and other charitable contributions to where they think they should go based on many things, but rarely coats coats or eating habits.

I encourage my husband to tithe 10% to the hard working girls at the local gentleman's club.

To tithe is a ridiculous notion. Far better to teach the person you have been titheing to how to earn a real living.

Since all the worlds money belongs to God anyway, I would prefer to tithe to someone who will use it for his kingdom.

that's hilarious!
Definetely the lab coat guy, only if he/she is working on something worth while, and not a new scented candle or stain cleaner.
