Eating in China is an artistic culture!!

The four main cuisines of China are:
1.Cantonese, which is famous for the seafood, fresh water food and exotic dishes. Some of them made of fowls and snakes make Cantonese cuisine so special and exotic! There is a saying in China that the Cantonese will eat anything with a wing except an airplane, and anything with legs except a table!
2.Sichuan cuisine is famous for spicy and hot. Pungency, to the degree of numbness, is a salient feature of Sichuan. A good Sichuan dish will leave you with you tummy full and your ears on fire!
3.Huaiyang cuisine is famous for its tenderness and freshness of materials, delicate tastes and the fastidious way of presentation, less greasy and very healthy. Huaiyang stands by the Huai’an-Yangzhou area of riverside cities in Jiangsu province.
4.Shandong cuisine is famous as Northern style cooking. Shandong chefs are especially skilled in producing high-calorie and high protein dishes.

Now some famous local delicacies worth mentioning!
Beijing: The imperial banquets in Beijing are considered Shandong style. These dishes originated in the kitchen of the imperial palace for the exclusive enjoyment of the emperor and empress in the old days. The serving of imperial dishes follows highly stylized procedures. Speaking of Beijing, one of the most famous Chinese dishes is Beijing Duck, which has the reputation as “the most delicious food on earth”. Even Beijing Duck has over 100 years of history, beginning in the Qing dynasty.

Xi'an: The Dumpling Banquet in Xi’an is another master piece in the northern style. Dumplings are considered the most traditional Chinese food, and are preserved as a must of the family celebration in the Chinese New Year’s Eve. The Dumpling Banquet is a feast of dumpling collection that is definitely a one-of-a-kind experience and should never be missed! The dumplings are as artistic as they are delicious! They come in all sizes and shapes. Some of the shapes are kittens, bunnies, peaches, fish and many more. And of course the ingredients vary as well from various vegetables and meats to fried walnuts. Just remember to pace yourself because there are 30 courses! To judge a good dish, we have very tough standards: the color, the shape, the taste, the smell and the aesthetics are all critical to make a perfect dish.

Of course, the real authentic Chinese food is in China! This is just to give you a start! If you want to know more about it before you go, you can contact me through our website: Jia@Jiasdreamtours.com

This is a hard question.

There are so many region and tribe, and so many kind of Food.

Generally, you can sub-divide them into north and south region.

In the north, they will normally have bread and noodles. This are food for the north. Hot plate, steam boat etc. This is mainly due to the weather, and the kind of product the land produce.

In the south, the food are generally more colourful, with rice, fish, vegi etc. . .

In the north west, they are more similar to those in the middle east, more roast meat etc. . .

In south west, more hot, similar to thai food. . . sour and hot. . .

Generally, in the south, the best group is Cantonese, from the GuangZhou. Hong Kong and Guang Zhou food is similar, just that Hong Konh is more mixed with the west, and is more moden, and Guang Zhou is more traditional.

Fujian, . . . . a bit more plain. Not as colourful as GuangZhou. TeowChew, or ChaoZhou, more of steam, and more fish/ seafood dishes.

Well . . . . just far too many.

By the way, if people taling about CHao mian (fried noodles), it is really not a true reflection of the Chinese food. It is just like saying, American food McDonald only. We know it is more than just that.

One more note, Chinese does eat almost anything. In their food, they will also have great variety. If you have too much oily food on day one, perhaps you may have something more clear and soupy on the other. Chinese believe food can use to balance the energy of our body.

Have fun.
