I have fresh orange roughy sitting in the fridge for dinner, and i NEED a recipe. So could someone suggest a recipe for it? Ive been on several different recipe websites already and nothing appealed to me. Please help me!

Use clarified butter for fish, always...

Brush Fish with butter and let sit in on a plate for about 30 min. Make sure you get both sides and really coat it.

Then, Lemon Pepper (fairly even coat)

Fry at med-high until flaky.

Make sure it is finished.

Deglaze pan with white wine and reduce (your sauce). Serve fish over steamed rice with the sauce

Mediterranean Orange Roughy

4 (6 ounce) orange roughy fillets, 1/2 inch thick
4 ounces feta cheese with dried basil and tomato or plain feta cheese
1/4 cup low-fat sour cream
1/4 cup finely chopped red onions
1 clove garlic, minced finely
3 tablespoons capers, drained and rinsed
2 small plum tomatoes, seeded,and finely chopped
2 teaspoons grated lemons, rind of
1 teaspoon dried oregano
1/2 teaspoon fresh ground black pepper
1/2 teaspoon kosher salt
1-2 teaspoon white wine (optional)

Preheat oven to 400°F Line baking sheet with foil.
Lightly spray foil with non-stick spray.
Season fish on both sides with kosher salt and fresh ground pepper.
In a medium bowl combine feta, sour cream, red onion, garlic, capers, tomatoes, lemon peel and oregano and stir until thoroughly combined.
Add wine to feta cheese mixture if desired.
Arrange fish on prepared baking sheet.
Spread cheese topping over fish.
Bake until fish is just cooked through, approximately 10-12 minutes

get a can of honey roasted cashews and chop them into a fine meal using blender or processor. dip fish in egg wash then into cashew meal, then sautee until you have a brown crust. finish cooking in oven about 8 more minutes. for a sauce mix plain yogurt with dijon mustrd and a shot of worcestershire along with white pepper and garlic. serve with lemon slice on top.
I do not give meaasurements on ingredients as i think everyone should season to taste.
