Mainly because as you cook beets the pores in the beets open and the liquid leeches out, there is no way to stop this, the best way is not to cut them at all, wash them boiled them in salty water, drain cool to the point were you can handle them, I buy plastic gloves in the Dollar stores, this way I can peel them and not look like a serial killer, just use a table knife or small paring one as scrape the skin off, this way you can cut them or pickle them without losing much more liquid.

Like anything, if you cook something, the colour will change. The best way to keep the colour in your beets is to cook them whole and unpeeled with some baking soda in the water if you're boiling them, and then peel and cut them up for your recipe.
