I have heard that one will need to let chicken (and other meals) cool to room temp before restoring. I question this advice ! If it is proper to do so... explain the rational.

Yes it is. That is the right way. You also need to break things into smaller portions because they cool better.Sometimes food will be cool on the outer coating but still hot on the inside. If you put Hot chili in a pot, in the fridge-the middle will still be hot-3 days later.Foods become unsafe when you time and temp abuse it. I just took a serv safe class.

no, you can put hot food right to the refigerator. and i say that because the reason why you have to throw away food that sets out because germs don't like food that's real hot, but when it gets about room temp or a lil bit cooler, than you can get infested unless you put it in the fridge where it will be like below 40 degrees...

I usually let it get to room temperature before putting it in the frig.
