You don't say anything. Since you asked in the Etiquette question, you get the etiquette answer.

One is assumed not to be in control of flatulence. Anyone saying or doing anything to call attention to it, including the "culprit," is being rude. Everyone is supposed to politely pretend that nothing happened.

This is different from a burp, which one is assumed to be in control of, and requires an "excuse me."

I don't make the rules, but I know about them!

I would softly mumble "excuse me." Take responsibility for yourself and don't blame it on anyone else.

If the entire staff heard you, I would just say that "that comment was nothing personal." Or something humorous. After all, everyone is that room farts once in a while.

Well, you could either pretend it didn't happen, which is more professional, or try a little humor by saying something like "well, that's my take on the situation."
