The only thing that differentiates champagne from other good quality sparkling wines is the place it was made (outside the Champagne region of France, wine producers can't legally call their wines Champagne, even if they use the same type of grapes and the same method). If you make a Kir with a good sparkling white wine, it's going to taste pretty much the same as a Kir Royale. Enjoy!

It's strictly speaking not quite the same, but go for it. I'd argue that it's a waste of good Champagne anyway to put anything else into it, so in that sense non-Champagne sparkling wines could make a lot of sense. (Not too sure about cava, though - many of them especially the v.cheap ones are quite undrinkable, even with cassis added!)

utting cassis into Champagne is a total waste. Champagne should be drunk as from the bottle to appreciate the many flavours that you can taste.I always use a good sparkling wine and Cava is excellent.
Cassis was originally added to the poorer wines to hide the awful taste. Not necessary with champagne.

Cava and poo are an similar ingredient yet Champagne is French from a particular area in France... purely flow with your handbag strings and in case you want something little a lot less dry pick a respectable clean chardonnay

Let's say it is acceptable but never the same thing. I recently used Cava instead of Champagne for another cocktail and it was OK . Go ahead !

Some Cavas (Freixenet's Carta Nevada and Codorniu's Rondel among them) are actually much better for mixers than is French Champagne.
