Ok, I'm a dunce in the kitchen but if someone could provide me with simple directions (or a link to the same) for cooking 2 games hens I would be eternally thankful!

you cook it exactly like you would cook a chicken, stuffed or not .

ORANGE APRICOT GLAZED ROCK CORNISH GAME HENS

2 Cornish hens (1-1/2 lbs. each. halved)
1/4 teaspoon kosher salt
1/8 teaspoon white pepper
1/3 cup 100% apricot fruit spread, warmed
1 tablespoon orange juice

Place hens, breast side up, on a rack in a shallow roasting pan. Sprinkle with salt and pepper. Bake, uncovered, at 350' for 30 minutes. In a small bowl, combine spreadable fruit and orange juice. Spoon some of the apricot mixture over the hens. Bake 30-35 minutes longer or until golden brown and juices run clear, basting several times with remaining apricot mixture. Let stand for 5 minutes before serving.

This is a recipe that my grandfather used to use after coming home from the hunt. The hens really taste great!

It serves 2 people.
Preparation and Cooking Time: 15-20 to 65-70 minutes

Ingredients:

* 2 Cornish game hens
* salt and pepper to taste
* 1/2 lemon, quartered
* 2.5 tablespoons chopped fresh rosemary
* 1.5 tablespoons olive oil
* 12 cloves garlic
* 1/6 cup white wine
* 1/6 cup low-sodium chicken broth
* 2 sprigs fresh rosemary

Instructions:

* Preheat oven to 450° F.
* Rinse hens and pat dry with paper towels. Lightly season cavities with salt and pepper to taste.
* Place 1 lemon wedge and 1 sprig rosemary in the cavity of each hen.
* Rub hens with 1 tablespoon of the olive oil. Season outside of hens with salt and pepper to taste.
* Arrange in a large, heavy roasting pan. Scatter garlic cloves around hens.
* Roast in preheated oven for 25 minutes.
* Reduce oven temperature to 350 degrees F
* Pour wine, broth and remaining 2 tablespoons of oil over hens.
* Continue roasting about 25 minutes longer, until hens are golden brown and juices run clear.
* Baste with pan juices every 10 minutes.
* Transfer hens to a platter, pouring any cavity juices into the roasting pan.
* Tent hens with aluminum foil to keep warm.
* Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes.
* Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens.
* Garnish with rosemary sprigs and serve.
