My southern mamas sweet tater casserole
3 cups mashed sweet potatoes (canned)
1 cup sugar
1/2 tsp. salt
2 eggs
1/3 stick butter
1 tsp. vanilla
Topping:
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup melted butter
Preheat oven to 350. Mix potatoes, sugar, salt, eggs, 1/3 stick butter and vanilla in a large bowl with an electric mixer. Pour into a casserole dish. In a separate bowl, mix topping ingredients well and sprinkle over top of casserole. Bake for about 35 minutes.

make sweet potato casserole (YUM)
Peel, cube and boil your sweet potatoes until they're fork tender. Mash with butter, milk, and brown sugar to taste. Spray non stick spray in an oven proof dish. Layer half the potatoes and then sprinkle marshmallows over. Repeat the potatoes, and cover with marshmallows. Bake at 350 until the marshmallows are melted and toasty--about 20 minutes. YOu can make this the day before, and then toss in the oven after the bird is pulled out. Happy Thanksgiving!

MICHIE's SWEET POTATO SOUFFLE:
3 lbs. sweet potatoes, peeled & cut into cubes
2 eggs
1/2 cup brown sugar - divided
1/2 cup butter - melted - divided
1 teaspoon salt
1 teaspoon ground cinnamon
up to 1/2 cup orange juice
1 cup chopped walnuts
large marshmallows
In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain. Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon. Starting with 1/4 cup orange juice, make mixture moist and fluffy. Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top. Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.

hi there here is a recipe that you my like>>>DEEP SOUTH SWEET POTATO PIE>>>>1 1/2 cups sweet potatoes boiled and mashed>>4 eggs >>1/3 cup sugar>>2 tablespoon honey>>3/4 teaspoon cinnamon>>1/4 teaspoon nutmeg>>1/8 teaspoon ground ginger>>1 cup light cream>>1/8 teaspoon salt>>1 teaspoon vanilla>>>>Mashed the boiled sweet potatoes with a mixer until smooth;Beat 4 eggs very lightly and add to the potatoes.Stir in the sugar and beat all together; add the honey ,cinnamon,and nutmeg with the ground ginger,cream,salt,and vanilla flavoring,mixing to blend..Pour into a unbaked pie shell and bake in a preheated 450* oven for 10 minutes.Reduce the temperature to 350* and bake for 30 minutes longer.or until a knife inserted near the pie center comes out clean..When done remove the pie from the oven and let cool down..you may serve the pie with whipped cream if you wish...good luck and HAPPY THANKSGIVING!!!

I mash my yams. Then I add dark syrup, brown sugar and butter. Mix it all up. Put it in a casserole dish. I also put pecans on top. Cook till the syrup thickens up. Then just before serving, I put the marshmellows on top and cook till mm's are brown and melted. I know some people put a little bit of orange juice in them. But mine are known as 'candied' sweet potatoes. If you don't want them so sweet, go easy on the syrup and sugar. or leave them out altogether. Just depends on YOUR taste.
