I'm going to start freezing meals again, and one dish my family loves is a chicken rice dish--but I don't know if I freeze the rice if it will become rock hard, or if it will defrost nicely, like noodles do. Anyone know?

You should have no problems freezing rice. I see frozen meals such as Healthy Choice, Banquet, Stoeffers and others all the time at the store. Tried a couple and they weren't bad for "TV dinners".

If you do, you need to make sure you put it into smaller portions and that it is cool first. You should never freeze hot foods.

Sure you can freeze it, just put lid on the container you warm it in.

It will taste as good as new when you heat it up via the microwave or the stove.
