Vegetable Biryani

Ingredients

1.5 cups of good quality Basmati Rice
250 gms. Cauliflower
2 medium sized Potatoes
2 medium sized Onions
50 gms. Green Peas
A few Cloves,Cinnamon stick, Black Pepper, big Black Cardamom, a Bayleaf or two (everything whole)
Oil for frying
Salt to taste
1 medium Tomato chopped
1/2 cup of Yogurt
Ginger Garlic paste
1.5 tsp Haldi powder
2 tbsp Cumin-Coriander powder
2 tsp .(or to taste) Red Chilli powder

Method:


Wash rice and put them into boiling salted water for 5 minutes and drain. Keep aside.
Chop the onion and fry with whole garam masala listed in the ingredients until brown.
Cut all the vegetables into big pieces and add to the onion mix.
Add chopped tomatoes, yogurt, salt, Ginger-Garlic paste, Haldi powder, Red Chilli powder and Cumin-Coriander powder
Stir until all the vegetables are well-coated with spices.
Spread the rice over the vegetables.
Cover with Aluminum foil and cook on very low flame for about 60-70 mins.
Check every 15 mins. or so for water. Normally no water is needed. It will cook in the juices of vegetables and yogurt.
Garnish with chopped coriander leaves, fried cashews (if desired) and serve with Raita.

Quick Pulao /Vegetable Biryani

Ingredients
Onion - 1 cup ChoppedMix Vegetables - 1 cupOil - As requiredSalt - To Taste
To GRINDTomato - 1 medium sizedGinger - 1/2 inch pieceJeera - 1/2 tspPepper - Exactly 5Green chilly - 1(Do not grind with lot of water)

Method
· In a pressure pan, add oil and when hot add onion and fry till transparent.· Now add the vegetables and add salt. Fry for a minute. · Add the ground masala and fry for few more minutes. · Add the washed basmati rice with water (Usually for 1 cup of basmati rice add 1 and half cup water).For this recipe give some allowance for water used in grinding the paste. · Add salt and clise. · Allow one whistle in low heat.

2 1/2 cups vegetable broth
1 cup chopped onions
2 teaspoons fresh ginger, peeled and grated
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/2 teaspoon ground cinnamon
1 pinch pepper
1/2 cup water
1 medium carrot, diced
2 cups small cauliflower florets
1 medium bell pepper, diced
1 tomato, diced
1/2 cup frozen fresh peas
1/3 cup raisins
3/4 cup canned chickpeas, rinsed and drained
salt, to taste
roasted cashews, for garnish

Heat 1 tablespoon oil and add rice; sauté briefly, stirring to coat each grain completely.
Add crumbled saffron, turmeric, salt, and vegetable broth.
Bring to a boil, cover and reduce heat; simmer for 30 minutes.
Meanwhile, heat remaining 2 tablespoons oil over medium-high heat and sauté the onions for 5 minutes.
Add ginger, cumin, coriander, cinnamon, and cayenne, and cook for one minute, stirring constantly.
Preheat oven to 350.
Add 1/2 cup water, carrot, and cauliflower; cover, reduce heat and cook 3 to 4 minutes.
Add remaining ingredients and simmer until vegetables are just tender, adding more water as needed.
Season with salt, to taste.
Butter a baking dish, spread half of rice in it, cover with vegetable mixture, and top with the rest of the rice.
Cover tightly with foil and bake for 30 minutes.
Garnish with toasted cashews.

I have never used mint in Vegetable Biryani. You could leave it out or substitute Cilantro which is used quite often in Indian dishes. Just make sure you are using FRESH herbs, not dried.
